Step 1: Prepare the Potatoes
Begin by washing and peeling the potatoes. Yukon Gold potatoes work particularly well because they have a naturally creamy texture, while russet potatoes produce a softer, starchier casserole.
Slice the potatoes into very thin, even rounds, about 1/8 inch thick.
