Cheesy Green Chile Tortilla Pinwheel Rolls Baked Golden

There is something especially satisfying about a warm, cheesy appetizer that comes out of the oven with crisp golden edges and a creamy center. These Cheesy Green Chile Tortilla Pinwheel Rolls bring together melted cheese, mild green chiles, flavorful seasonings, and soft flour tortillas in an easy-to-prepare snack that is perfect for parties, game days, family gatherings, or a casual afternoon treat.

The tortillas are spread with a rich, creamy cheese mixture, rolled tightly, sliced into attractive spirals, and baked until the edges become lightly crisp while the cheese turns wonderfully gooey. The green chiles add a gentle Southwestern-style flavor without overpowering the cheese, making these pinwheels easy to enjoy even for guests who prefer milder appetizers.

Why You’ll Love These Pinwheels

These baked tortilla rolls are simple enough for a beginner but look impressive when arranged on a serving platter. They can also be prepared ahead of time, making them convenient when you’re entertaining.

The combination of textures is what makes them special: tender tortilla on the inside, creamy melted cheese in the middle, and beautifully browned edges around each pinwheel.

Ingredients

  • 4 large flour tortillas, preferably burrito-size
  • 8 ounces cream cheese, softened
  • 1 ½ cups shredded Mexican-blend cheese or Monterey Jack cheese
  • 1 small can diced green chiles, drained well
  • 2 tablespoons sour cream
  • 2 tablespoons finely chopped green onions
  • 1 small clove garlic, finely minced
  • ½ teaspoon chili powder
  • ½ teaspoon ground cumin
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon chopped fresh cilantro, optional
  • Cooking spray or a small amount of oil for the baking sheet

Step 1: Prepare the Creamy Filling

Start by allowing the cream cheese to soften at room temperature. This makes it much easier to spread evenly over the tortillas.

Place the softened cream cheese in a mixing bowl and add the sour cream. Stir until the mixture is smooth and creamy. Add the shredded cheese, drained green chiles, green onions, garlic, chili powder, cumin, smoked paprika, salt, and black pepper.

Mix everything together until the ingredients are evenly distributed.

If you’re using cilantro, fold it in at the end. Taste the mixture and adjust the seasoning if necessary.

Tip: Make sure the green chiles are well drained. Excess liquid can make the tortillas difficult to roll and may prevent the pinwheels from becoming nicely golden in the oven.

Step 2: Warm the Tortillas Slightly

Place the tortillas on a clean plate and warm them briefly so they become flexible.

You can microwave them for about 10–15 seconds, or warm them individually in a dry skillet for a few seconds on each side.

The tortillas should be soft and pliable, not hot or crispy.
