Ingredients
For the Chicken
- 3 pounds chicken pieces, such as thighs, drumsticks, breasts, or wings
- 2 cups buttermilk
- 1 large egg
- 1 tablespoon hot sauce, optional
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
For the Crispy Coating
- 2½ cups all-purpose flour
- ½ cup cornstarch
- 2 teaspoons paprika
- 1½ teaspoons garlic powder
- 1½ teaspoons onion powder
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon black pepper
- 1½ teaspoons salt
- ½ teaspoon cayenne pepper, optional
For Frying
- Neutral frying oil, such as peanut, canola, or vegetable oil
Step 1: Prepare the Chicken
Pat the chicken pieces dry with paper towels. Removing excess moisture helps the marinade cling properly and makes the coating easier to build.
If using large chicken breasts, you can cut them into smaller portions so they cook more evenly.
Place the chicken in a large bowl or resealable container.
Step 2: Make the Buttermilk Marinade
Whisk together the buttermilk, egg, salt, black pepper, garlic powder, and hot sauce if using.
