Mini Corn Dog Muffins: A Fun Bite-Sized Snack Recipe

Mini Corn Dog Muffins are a simple, kid-friendly, party-style snack made with soft cornbread batter and small pieces of hot dog baked inside. They taste like classic corn dogs, but instead of deep-frying, they are baked in a mini muffin pan until golden, fluffy, and lightly crisp around the edges.

These little muffins are perfect for lunch boxes, game-day snacks, birthday parties, family movie nights, or quick appetizers. They are easy to hold, easy to dip, and much less messy than traditional corn dogs.

Why Mini Corn Dog Muffins Are So Popular

The best thing about Mini Corn Dog Muffins is how easy they are to make. You do not need skewers, hot oil, or deep-frying. The cornbread batter bakes around the hot dog pieces, creating a soft, slightly sweet, savory muffin with a warm sausage center.

They are also very flexible. You can make them with classic hot dogs, turkey dogs, chicken sausages, beef franks, or even vegetarian hot dogs. Serve them with ketchup, mustard, honey mustard, ranch, or barbecue sauce for dipping.

Ingredients

For the Muffins

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup milk or buttermilk
  • 2 large eggs
  • ¼ cup melted butter or vegetable oil
  • 1 tablespoon honey, optional
  • 6 hot dogs, cut into small pieces

Optional Add-Ins

  • ½ cup shredded cheddar cheese
  • 1 tablespoon chopped chives or green onions
  • ¼ teaspoon paprika
  • ¼ teaspoon garlic powder
  • A pinch of black pepper

For Serving

  • Ketchup
  • Yellow mustard
  • Honey mustard
  • Ranch dressing
  • Barbecue sauce

Step 1: Prepare the Muffin Pan

Preheat your oven to 375°F / 190°C.

Grease a mini muffin pan very well with cooking spray, butter, or oil. This is important because cornbread can stick if the pan is not properly greased.

A mini muffin pan works best because it creates small bite-sized corn dog muffins. You can use a regular muffin pan, but the baking time will be longer.

Step 2: Cut the Hot Dogs

Slice the hot dogs into small pieces. Each piece should be about ½ inch thick.

For mini muffins, one small piece of hot dog in the center of each muffin is enough. If you want more hot dog flavor, you can cut the pieces slightly larger or add two small pieces to each muffin.

Set the hot dog pieces aside while you prepare the batter.

Step 3: Mix the Dry Ingredients

In a large mixing bowl, add the cornmeal, flour, sugar, baking powder, and salt.

Whisk everything together until evenly combined.

The cornmeal gives the muffins their classic corn dog flavor, while the flour helps make the texture softer and lighter. Sugar adds a slight sweetness, which balances the salty hot dogs.
