  • 1 1/2 cups milk

  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • Salt, to taste

For the topping:

  • 1/2 cup shredded cheddar cheese
  • 1/4 cup breadcrumbs
  • 1 tablespoon melted butter
  • 2 tablespoons grated Parmesan cheese

Step 1: Prepare the Cauliflower

Start by preheating your oven to 375°F (190°C).

Wash the cauliflower thoroughly and cut it into relatively small, evenly sized florets. Keeping the pieces similar in size helps them cook at the same rate.

Bring a large pot of lightly salted water to a boil. Add the cauliflower and cook for about 4–5 minutes, just until the florets begin to soften.

You don’t want the cauliflower completely tender at this stage. It will continue cooking in the oven, so slightly firm florets will give the finished casserole a much better texture.

Drain the cauliflower very well. Let it sit in the colander for a few minutes so excess moisture can evaporate.

This step is important because watery cauliflower can make the finished cheese sauce thin.

Step 2: Make the Creamy Cheese Sauce

While the cauliflower is draining, prepare the sauce.

Melt the butter in a saucepan over medium heat. Once melted, whisk in the flour and cook for about 1 minute, stirring continuously.

Gradually pour in the milk while whisking. Continue stirring until the mixture becomes smooth and begins to thicken.

Reduce the heat slightly and add the softened cream cheese. Stir until it melts completely into the sauce.

Next, add the shredded cheddar and mozzarella a little at a time. Stir after each addition until the cheese has melted and the sauce is smooth.

Season with garlic powder, onion powder, black pepper, paprika, and a small amount of salt.

Taste the sauce before adding more salt because the cheese already provides plenty of seasoning.

The finished sauce should be creamy and thick enough to coat the back of a spoon.

Step 3: Combine the Cauliflower and Cheese Sauce

Place the drained cauliflower florets into a large mixing bowl.

Pour the warm cheese sauce over the cauliflower and gently fold everything together. Be careful not to mash the florets.

You want every piece of cauliflower lightly coated with the creamy sauce.
