  • 1 teaspoon salt, divided
  • ½ teaspoon black pepper
  • 1 tablespoon all-purpose flour
  • 1 cup shredded Gruyère or Swiss cheese

Step 1: Prepare the Pork Chops

Pat the pork chops dry with paper towels. This helps the seasoning stick and also encourages better browning if you choose to sear them first.

Season both sides with salt, black pepper, and a little of the dried thyme.

For the best flavor, use pork chops that are reasonably thick. Thin chops can become dry during a long slow-cooking process.

Step 2: Sear the Pork

Heat the olive oil in a large skillet over medium-high heat.
