Lemon Custard Pie with Graham Cracker Crust
There is something wonderfully comforting about a classic lemon custard pie. It combines the bright, refreshing flavor of fresh lemons with a smooth, creamy filling and a buttery graham cracker crust. The result is a dessert that tastes light and sunny while still being rich enough to feel indulgent.
This Lemon Custard Pie is especially delicious when served chilled. The lemon brings just enough tartness to balance the sweetness of the custard, while the graham cracker crust adds a pleasant buttery crunch. It is simple enough for a weekend dessert but elegant enough to serve at a family gathering, brunch, or holiday dinner.
Why You’ll Love This Lemon Custard Pie
This pie has several layers of flavor and texture that work beautifully together. The graham cracker crust provides a lightly crisp, caramel-like foundation, while the lemon custard becomes silky and tender as it bakes.
Fresh lemon juice and finely grated zest give the filling a natural citrus flavor that bottled lemon juice simply cannot match. A small amount of vanilla rounds out the lemon without overpowering it.
The best part is that most of the preparation is straightforward. Once the crust is pressed into the pie dish, the filling comes together in one bowl, making this a relatively easy homemade dessert.
Ingredients
For the Graham Cracker Crust
- 1 ½ cups finely crushed graham crackers
- 5 tablespoons unsalted butter, melted
- 3 tablespoons granulated sugar
- ¼ teaspoon salt
For the Lemon Custard Filling
- 4 large eggs
- 1 cup granulated sugar
- ½ cup fresh lemon juice
- 1 tablespoon finely grated lemon zest
- 1 cup heavy cream
- ½ cup whole milk
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
Optional Garnishes
- Powdered sugar
- Thin lemon slices
- Whipped cream
- Extra finely grated lemon zest
Step 1: Prepare the Graham Cracker Crumbs
If you are using whole graham crackers, crush them until they resemble fine, even crumbs. You can use a food processor or place the crackers in a sealed bag and crush them with a rolling pin.
The crumbs should be fine enough to hold together when pressed. Larger pieces can make the crust crumbly and difficult to slice cleanly.
Step 2: Make the Graham Cracker Crust
Place the graham cracker crumbs in a bowl and add the sugar and salt. Stir until evenly combined.
Pour in the melted butter and mix thoroughly. The mixture should resemble damp sand and should hold together when squeezed between your fingers.
Transfer the mixture to a 9-inch pie dish. Using the bottom of a measuring cup or glass, firmly press the crumbs across the bottom of the dish and slightly up the sides.
Pay particular attention to the corners where the bottom meets the sides. A firmly packed crust will be much easier to slice after baking.
Step 3: Bake the Crust
Preheat your oven to 350°F (175°C).
Bake the crust for approximately 8–10 minutes, just until it becomes lightly golden and smells buttery and toasted.
Remove it from the oven and allow it to cool for several minutes while you prepare the custard.
The crust does not need to become deeply browned at this stage because it will continue baking with the filling.
