Salted Caramel Pecan Praline Crunch

There is something irresistible about the combination of buttery pecans, rich caramel, and a touch of sea salt. This Salted Caramel Pecan Praline Crunch brings all three together in a crisp, golden treat that is wonderfully crunchy, deeply caramelized, and packed with toasted pecan flavor.

The mixture bakes into a thin, brittle-like layer with little pieces of pecan throughout. Once cooled, it can be broken into rustic shards and enjoyed as a sweet snack, served alongside coffee, or used as a crunchy topping for ice cream, cakes, brownies, and puddings.

The secret to getting the best texture is to toast the pecans first and allow the caramel mixture to cook until it reaches the proper stage before baking. A final sprinkle of flaky sea salt balances the sweetness and gives the praline its signature salted-caramel flavor.

Why You’ll Love This Recipe

  • Crispy and crunchy: The caramelized coating hardens beautifully as it cools.
  • Loaded with pecans: Toasted pecans add a rich, buttery flavor and satisfying texture.
  • Sweet and salty: Sea salt keeps the caramel from tasting overly sweet.
  • Easy to customize: Add chocolate, cinnamon, or other nuts for a different variation.
  • Great for gifting: Once completely cooled, the pieces can be packaged in an airtight container for a homemade treat.

Ingredients

For the Pecan Crunch

  • 2 cups pecan halves or roughly chopped pecans
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1/2 cup unsalted butter
  • 1/4 cup light corn syrup
  • 2 tablespoons heavy cream
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 1/2 teaspoon cinnamon, optional
  • Flaky sea salt, for finishing

Step 1: Prepare the Baking Sheet

Preheat your oven to 350°F (175°C).

Line a large rimmed baking sheet with parchment paper or a silicone baking mat. Lightly grease the parchment if desired. Having the pan prepared before making the caramel is important because the hot mixture needs to be transferred quickly once it reaches the right consistency.

Step 2: Toast the Pecans

Spread the pecans evenly over the prepared baking sheet and toast them in the oven for about 7–9 minutes, stirring once halfway through.

The pecans should smell fragrant and nutty but should not become dark or burnt.

Remove them from the oven and set them aside. Toasting the pecans first gives them a deeper flavor and helps them stay pleasantly crisp beneath the caramel coating.

Step 3: Make the Caramel Base

Place a medium heavy-bottomed saucepan over medium heat.

Add the butter, granulated sugar, brown sugar, and corn syrup. Stir gently as the butter melts and the sugars begin to dissolve.

Continue cooking until the mixture comes to a steady simmer. Once it is bubbling, cook for approximately 3–4 minutes, stirring frequently so the sugars do not scorch on the bottom.

The mixture should become smooth, glossy, and slightly darker in color.

Step 4: Add the Cream and Flavorings

Carefully stir in the heavy cream, vanilla extract, sea salt, and cinnamon if using.

The mixture may bubble vigorously when the cream is added, so pour it in slowly and keep your hands and face away from the steam.

Continue cooking for another 1–2 minutes, stirring constantly.

For the most reliable result, use a candy thermometer and cook the caramel to approximately 245–250°F (118–121°C). This helps ensure the finished crunch becomes firm and crisp rather than remaining soft.
