For the Chocolate Cake

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1½ teaspoons baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup hot coffee or hot water

For the Frosting

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • ½ cup unsweetened cocoa powder
  • 2 teaspoons vanilla extract
  • 4–6 tablespoons heavy cream or milk
  • Pinch of salt

For the Christmas Topping

Use a combination of your favorites:

  • Red and green sprinkles
  • Mini chocolate candies
  • Crushed peppermint candies
  • Mini marshmallows
  • Chocolate chips or chocolate chunks
  • Red and green candy-coated chocolates
  • White chocolate pieces
  • Christmas cookies or gingerbread cookies
  • Powdered sugar, for a snowy finish

Step-by-Step Method

1. Prepare the Cake Pans

Begin by preheating your oven to 350°F (175°C).

Grease two 9-inch round cake pans and line the bottoms with parchment paper. Lightly flour the sides of the pans as well. Preparing the pans properly makes removing the cakes much easier after baking.

2. Mix the Dry Ingredients

In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

Whisking everything together before adding the wet ingredients helps distribute the leavening agents and cocoa evenly throughout the flour.

3. Add the Wet Ingredients

Add the eggs, milk, vegetable oil, and vanilla extract to the dry mixture.

Beat the ingredients together until the batter becomes smooth. Don’t worry if it looks relatively thin; this cake batter is intentionally more fluid than a typical butter cake.

4. Add the Hot Coffee

Slowly pour in the hot coffee while mixing gently.

The coffee intensifies the chocolate flavor without making the cake taste strongly of coffee. The batter will become even thinner, which is completely normal.

If you prefer not to use coffee, simply substitute hot water.

5. Bake the Cakes

Divide the batter evenly between the prepared pans.

Place the pans in the preheated oven and bake for approximately 28–34 minutes, or until a toothpick inserted into the center comes out with only a few moist crumbs.

Avoid overbaking the cakes because you want the layers to remain soft and moist.

Remove them from the oven and allow them to cool in their pans for about 10 minutes. Carefully turn the cakes onto wire racks and let them cool completely.
