Apple Pie Bread: All the Comfort of Apple Pie in a Sliceable Loaf

Apple Pie Bread is the perfect fusion of two beloved classics: warm, spiced apple pie and soft, buttery quick bread. It captures everything we love about homemade apple pie—the tender apples, cinnamon-sugar swirl, and cozy aroma—but without the fuss of rolling dough or making a crust. This loaf is moist, fragrant, and packed with apple flavor, making it ideal for breakfast, afternoon coffee, or a comforting dessert.

Below is a step-by-step guide to making Apple Pie Bread at home, with tips to ensure perfect results every time.

What Makes Apple Pie Bread Special?

Unlike regular apple bread, Apple Pie Bread includes a cinnamon-sugar swirl that mimics the flavor of classic apple pie filling. Chunks of fresh apples soften as they bake, releasing sweetness and moisture into the loaf. The result is a bread that tastes like apple pie—but slices neatly and travels well.

Ingredients You’ll Need

For the Bread Batter

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg (optional, but recommended)
  • ½ cup granulated sugar
  • ½ cup brown sugar (packed)
  • 2 large eggs
  • ½ cup vegetable oil or melted butter
  • ½ cup milk or buttermilk
  • 2 teaspoons vanilla extract

For the Apple Filling

  • 2 cups apples, peeled and finely chopped (Granny Smith or Honeycrisp work best)
  • 2 tablespoons granulated sugar
  • 1 teaspoon cinnamon

For the Cinnamon Swirl

  • ⅓ cup brown sugar
  • 1 teaspoon cinnamon

Step-by-Step Method

Step 1: Prepare the Oven and Pan

Preheat your oven to 175°C (350°F). Grease a standard loaf pan (9×5 inches) with butter or nonstick spray, then lightly dust it with flour. This helps prevent sticking and ensures easy removal.

Step 2: Mix the Dry Ingredients

In a medium bowl, whisk together:

  • Flour
  • Baking powder
  • Baking soda
  • Salt
  • Cinnamon
  • Nutmeg

Whisking evenly distributes the spices and leavening agents, which helps the bread rise properly and bake evenly.

Step 3: Prepare the Apple Filling

In a separate bowl, combine the chopped apples with sugar and cinnamon. Stir until the apples are evenly coated. Set aside—this allows the apples to release a bit of their natural juice, enhancing flavor during baking.

Step 4: Make the Batter

In a large bowl, whisk together:

  • Granulated sugar
  • Brown sugar
  • Eggs

Beat until the mixture looks smooth and slightly lighter in color. Slowly add the oil (or melted butter), followed by milk and vanilla extract. Stir until fully combined.

Gradually add the dry ingredients to the wet mixture, stirring gently. Mix just until no dry flour remains—overmixing can make the bread dense.
