This soft, moist quick bread combines tender apples, warm spices, and a sweet cinnamon swirl that tastes just like a slice of apple pie baked into a loaf. Ingredients

For the Apple Mixture

  • 2 medium apples, peeled and diced
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon

For the Bread Batter

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ½ cup vegetable oil (or melted butter)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup milk or buttermilk

Optional Cinnamon Swirl

  • 2 tablespoons brown sugar
  • ½ teaspoon cinnamon

Optional Glaze

  • ½ cup powdered sugar
  • 1–2 tablespoons milk
  • ¼ teaspoon vanilla extract

Step 1: Prepare the Apples

Start by peeling and chopping the apples into small cubes. Place them in a small bowl and mix them with the brown sugar and cinnamon. This mixture allows the apples to absorb the sweetness and spice, giving the bread that classic apple pie flavor.

Set the bowl aside while you prepare the batter.


Step 2: Preheat the Oven

Preheat your oven to 350°F (175°C). Grease a standard 9×5-inch loaf pan with butter or nonstick spray. You can also line it with parchment paper for easier removal after baking.


Step 3: Mix the Dry Ingredients

In a medium bowl, whisk together:

  • Flour
  • Baking powder
  • Baking soda
  • Salt
  • Cinnamon

Mixing these ingredients first ensures the leavening agents and spices are evenly distributed throughout the batter.


Step 4: Prepare the Wet Ingredients

In a large mixing bowl, combine:

  • Granulated sugar
  • Brown sugar
  • Vegetable oil (or melted butter)

Whisk until the mixture looks smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and milk.

This mixture should become creamy and slightly thick.


Step 5: Combine Wet and Dry Ingredients

Gradually add the dry ingredient mixture to the wet ingredients. Stir gently with a spatula or wooden spoon until just combined. Avoid overmixing, as this can make the bread dense instead of soft.
