Baked Pierogi and Kielbasa Casserole: A Cozy Polish-Inspired Comfort Food

There is something wonderfully comforting about a casserole that brings together a handful of familiar ingredients and turns them into one hearty, satisfying meal. Baked Pierogi and Kielbasa Casserole does exactly that. Tender potato-and-cheese pierogi are combined with smoky kielbasa, sweet onions, a creamy sauce, and melted cheese, then baked until bubbling and golden.

This dish is especially useful when you want a filling dinner without spending hours in the kitchen. Instead of cooking every component separately and serving them side by side, the casserole lets the flavors mingle in one baking dish. The pierogi soak up some of the savory sauce while the kielbasa adds a smoky, slightly crisp contrast.

Why This Casserole Works So Well

The secret is the balance between textures and flavors. Pierogi provide a soft, comforting center, while browned kielbasa brings a little chewiness and savory depth. Onions add sweetness as they soften, and the creamy sauce ties everything together.

For an extra layer of flavor, the casserole is finished with shredded cheese. As it bakes, the cheese melts into the sauce and develops lightly browned spots across the top.

It is also an easy recipe to adapt. You can use frozen pierogi for convenience, choose your favorite variety, or add vegetables such as mushrooms, spinach, or bell peppers.

Ingredients

For approximately 6 servings, you will need:

  • 1 package (about 16 ounces) frozen potato-and-cheese pierogi
  • 12 ounces kielbasa, sliced into rounds
  • 1 medium yellow onion, thinly sliced
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 cup sour cream
  • 1 cup chicken broth
  • 1 teaspoon Dijon mustard
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt, or to taste
  • 1½ cups shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 2 tablespoons chopped fresh parsley
  • Cooking spray or a little butter for the baking dish

Step 1: Prepare the Oven and Baking Dish

Begin by preheating your oven to 375°F (190°C).

Lightly grease a 9-by-13-inch baking dish. Greasing the dish helps prevent the creamy sauce and melted cheese from sticking around the edges and makes serving easier later.

If your pierogi are frozen, there is generally no need to thaw them first. Keeping them frozen makes this casserole particularly convenient for a weeknight dinner.

Step 2: Brown the Kielbasa

Heat a large skillet over medium heat and add the sliced kielbasa.

Cook the sausage for approximately 4–6 minutes, turning the slices occasionally. You want the edges to become lightly browned and caramelized.

This step is worth doing rather than simply placing the sausage into the casserole raw. Browning develops deeper savory flavors and gives the kielbasa a pleasant texture.

Once browned, transfer the kielbasa to a plate and set it aside.

Step 3: Cook the Onion and Garlic

Using the same skillet, add the butter.

Once melted, add the sliced onion and cook for about 5–7 minutes, stirring occasionally. The onion should become soft and slightly golden.

Add the minced garlic during the final minute of cooking. Stir continuously so the garlic becomes fragrant without burning.

Using the same skillet allows the onions to pick up some of the flavorful browned bits left behind by the kielbasa.
