Banana Cake with Buttercream Frosting

 

Instructions

Make the Cake:

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish with nonstick spray.

  2. In a medium bowl, cream together the sugar, sour cream, eggs, and melted butter.

  3. Mix in the mashed bananas and vanilla extract until smooth.

  4. Add flour and baking soda, stirring until just combined. Fold in walnuts if using.

  5. Pour batter into prepared pan and spread evenly.

  6. Bake for 25–35 minutes, or until a toothpick inserted in the center comes out clean.

  7. Cool completely before frosting.

Make the Frosting:

  1. In a large bowl, beat butter and powdered sugar together until smooth and fluffy.

  2. Slowly add heavy cream, mixing until light and creamy.

  3. Stir in vanilla extract.

  4. Spread frosting evenly over cooled cake. Slice and enjoy!
