Ingredients
For the Beef Filling
- 1 pound ground beef
- 1 tablespoon olive oil, if needed
- ½ small onion, finely diced
- 2 cloves garlic, minced
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- ½ teaspoon Italian seasoning
- ¼ teaspoon onion powder
- 1 tablespoon ketchup
- 1 tablespoon Worcestershire sauce
For the Biscuit Bites
- 1 tube refrigerated biscuit dough, preferably flaky-style biscuits
- 1 to 1½ cups shredded cheddar cheese
- 1 tablespoon melted butter
- ¼ teaspoon garlic powder
- ½ teaspoon dried parsley
Optional:
- Shredded mozzarella for extra stretchiness
- Red pepper flakes for a little heat
- Sesame seeds for topping
- Finely chopped green onions for serving
Step 1: Prepare the Beef Filling
Start by heating a large skillet over medium heat. Add the ground beef and break it apart with a wooden spoon or spatula.
Cook the beef for several minutes, stirring occasionally, until it is browned and no longer pink.
If there is a large amount of excess grease in the skillet, carefully drain it. Leave just enough fat to help flavor the beef.
Add the diced onion and cook for about 3–4 minutes, or until the onion begins to soften. Stir in the minced garlic and cook for another 30 seconds.
Add the salt, black pepper, paprika, Italian seasoning, and onion powder. Stir everything together so the seasonings coat the beef evenly.
Finally, add the ketchup and Worcestershire sauce. These two ingredients give the filling a deeper savory flavor with a slight sweetness and tang.
Cook for another 1–2 minutes, then remove the skillet from the heat.
Allow the beef mixture to cool slightly before assembling the biscuits. A filling that is too hot can make the dough difficult to handle.
Step 2: Prepare the Biscuit Dough
Preheat your oven to 375°F (190°C).
Lightly grease a muffin tin or line a baking sheet with parchment paper, depending on the shape and size of biscuit bites you want to make.
Open the refrigerated biscuit dough and separate the biscuits.
Using your fingers or a small rolling pin, gently flatten each biscuit into a small round. Try not to make the dough too thin because it needs to hold the beef and cheese without tearing.
If your biscuits are especially thick, you can carefully stretch them slightly around the edges.
Step 3: Add the Cheese
Place a small amount of shredded cheddar cheese in the center of each flattened biscuit.
Don’t overfill them. You want enough room to add the beef while still being able to seal the dough completely.
For an extra cheesy center, combine cheddar with a little mozzarella. The cheddar provides a bold flavor while mozzarella gives the filling a deliciously stretchy texture.
Step 4: Add the Beef Filling
Spoon approximately 1 tablespoon of the cooled beef mixture over the cheese.
The exact amount will depend on the size of your biscuits. The goal is to create a generous filling without making the dough impossible to close.
If you add too much filling, the biscuit may split during baking and allow the cheese and beef to escape.
