Beef Tips and Gravy Casserole is a hearty comfort-food dish made with tender pieces of beef, rich brown gravy, onions, mushrooms, and a warm casserole base such as egg noodles, rice, or mashed potatoes. It has the deep flavor of slow-cooked beef tips but is finished as a family-style baked casserole, making it perfect for weeknight dinners, potlucks, or cold-weather meals.

This dish is satisfying because it brings together soft beef, creamy gravy, and a filling starch in one baking dish. The beef becomes tender, the gravy thickens beautifully, and the casserole bakes until warm, rich, and bubbling around the edges.

Ingredients

For the Beef Tips

  • 2 pounds beef stew meat, sirloin tips, or chuck roast cut into cubes
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup mushrooms, sliced, optional
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • 1 tablespoon Worcestershire sauce

For the Gravy

  • 2 ½ cups beef broth
  • 1 packet brown gravy mix, optional for extra flavor
  • 1 can cream of mushroom soup or cream of beef soup
  • 2 tablespoons cornstarch
  • 3 tablespoons cold water
  • ½ teaspoon dried thyme, optional
  • ½ teaspoon dried parsley

For the Casserole Base

  • 3 cups cooked egg noodles, rice, or mashed potatoes
  • ½ cup sour cream, optional for a creamy version
  • 1 cup shredded mozzarella or cheddar cheese, optional
  • 2 tablespoons chopped parsley for garnish

Step 1: Choose and Prepare the Beef

For the best casserole, use beef that becomes tender when cooked slowly. Chuck roast, stew meat, or sirloin tips all work well.

Cut the beef into bite-sized cubes. Pat the meat dry with paper towels before seasoning. Dry beef browns better, and browning gives the gravy a deeper flavor.

Season the beef with salt, black pepper, garlic powder, onion powder, and paprika. Toss until every piece is coated.

Step 2: Brown the Beef

Heat olive oil and butter in a large skillet or Dutch oven over medium-high heat.

Add the beef in small batches. Do not overcrowd the pan. If too much beef is added at once, it will steam instead of brown.

Sear each side for 2 to 3 minutes until the beef develops a golden-brown crust. The beef does not need to be fully cooked at this stage.

Remove the browned beef and set it aside on a plate.

Step 3: Cook the Onion, Garlic, and Mushrooms

In the same pan, add the diced onion. Cook for 3 to 4 minutes until softened.

Add the minced garlic and cook for about 30 seconds, stirring constantly.

If using mushrooms, add them now and cook until they release moisture and begin to brown.

This step builds the flavor base for the gravy. The browned bits left in the pan from the beef will mix with the onions, garlic, and mushrooms to create a richer sauce.

Step 4: Make the Gravy Base

Pour the beef broth into the pan and stir well, scraping the bottom to lift the browned bits.

Add Worcestershire sauce, cream of mushroom soup, thyme, parsley, and brown gravy mix if using.

Stir until the mixture becomes smooth.

Return the browned beef to the pan. Bring the mixture to a gentle simmer.
