Cake Mix Italian Cream Cake (Easy, Moist & Rich Homemade Style)

Italian Cream Cake is usually known as a rich Southern-style dessert with layers of coconut, pecans, and a tangy cream cheese frosting. Traditionally it’s made from scratch, but this Cake Mix Italian Cream Cake version gives you the same bakery-style flavor with a much simpler method—perfect if you want something impressive without complicated steps.

This version keeps the cake light, moist, nutty, and creamy, while cutting down prep time using a boxed cake mix as the base.


🍰 What Makes This Cake Special?

Even though we’re using cake mix, the additions transform it into something homemade:

  • Buttermilk → adds tenderness and slight tang
  • Coconut → gives texture and sweetness
  • Pecans → add crunch and richness
  • Cream cheese frosting → balances everything with smooth, tangy creaminess

The result is a cake that tastes like it took hours—but really doesn’t.


🧾 Ingredients

For the Cake:

  • 1 box white or butter cake mix
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup shredded sweetened coconut
  • 1 cup chopped pecans
  • ½ cup sour cream (optional but makes it extra moist)

For the Cream Cheese Frosting:

  • 8 oz cream cheese (softened)
  • ½ cup unsalted butter (softened)
  • 3–4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1–2 tablespoons milk (as needed for texture)
  • ½ cup chopped pecans (for topping)
  • Extra coconut (optional garnish)

👩‍🍳 Step-by-Step Method

Step 1: Prepare Your Baking Pans

Preheat your oven to 350°F (175°C).

Grease and flour:

  • 2 or 3 round cake pans (8 or 9 inch)

You can also line the bottom with parchment paper for easier removal.


Step 2: Mix the Cake Batter

In a large mixing bowl:

  1. Add the cake mix
  2. Pour in buttermilk, oil, eggs, and vanilla
  3. Add sour cream (if using)

Mix with a hand mixer on medium speed for about 2 minutes, until smooth and creamy.

Now gently fold in:

  • Coconut
  • Chopped pecans

Do not overmix at this stage—just combine evenly.


Step 3: Bake the Cake

Divide batter evenly into prepared pans.

Bake for:

  • 25–30 minutes (layer cakes)
  • Or until a toothpick inserted in the center comes out clean

Once baked:

  • Let cakes cool in pans for 10–15 minutes
  • Then transfer to a wire rack to cool completely

💡 Important: Don’t frost warm cake or the frosting will melt.


Step 4: Make the Cream Cheese Frosting

In a bowl, beat together:

  • Softened cream cheese
  • Butter

Mix until smooth and fluffy.

Slowly add powdered sugar, one cup at a time, until thick and creamy.

Add:

  • Vanilla extract
  • Milk (only if needed to adjust consistency)

Beat until frosting is light, smooth, and spreadable.
