Cake Mix Italian Cream Cake

A bakery-style classic made easy with a boxed mix

Italian Cream Cake is a beloved Southern-style dessert known for its ultra-moist crumb, toasted pecans, sweet coconut, and rich cream cheese frosting. Traditionally made from scratch, this version uses a cake mix as the base—saving time while still delivering that homemade flavor and texture everyone loves.

This Cake Mix Italian Cream Cake is perfect for holidays, birthdays, potlucks, or whenever you want an impressive dessert without complicated steps.

What Makes Italian Cream Cake Special?

Despite the name, Italian Cream Cake is more popular in the American South than in Italy. Its signature features include:

  • A tender white cake base
  • Shredded sweetened coconut
  • Chopped pecans
  • Cream cheese frosting
  • Optional toasted coconut garnish

Using a cake mix ensures consistency while allowing you to enhance the flavor with simple add-ins.

Ingredients

For the Cake:

  • 1 box white or butter cake mix
  • 1 cup buttermilk (room temperature)
  • ½ cup vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sweetened shredded coconut
  • 1 cup chopped pecans

For the Cream Cheese Frosting:

  • 8 oz (225 g) cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2–3 tablespoons milk (if needed for consistency)

Optional garnish:

  • Toasted coconut flakes
  • Extra chopped pecans

Step-by-Step Method

Step 1: Prepare the Oven and Pans

Preheat your oven to 350°F (175°C).
Grease and flour two 9-inch round cake pans (or line with parchment paper for easy removal).

Proper pan preparation prevents sticking and ensures clean, beautiful layers.

Step 2: Mix the Cake Batter

In a large mixing bowl, combine:

  • Cake mix
  • Buttermilk
  • Vegetable oil
  • Eggs
  • Vanilla extract

Beat on medium speed for about 2 minutes until smooth and well combined.

The buttermilk adds richness and moisture, giving the cake a more homemade texture than water would.

Step 3: Fold in Coconut and Pecans

Using a spatula, gently fold in:

  • Shredded coconut
  • Chopped pecans

Do not overmix. Stir just until evenly distributed.

This step gives the cake its signature texture and flavor.
