Step 1: Prepare the Baking Sheet

Preheat your oven to 250°F (120°C).

If you are making a large batch, use two baking sheets rather than overcrowding one. The cereal should have enough room to be spread into a relatively even layer.

Step 2: Measure the Cereal

Place the Chex cereal in a very large mixing bowl.

If you’re adding nuts or pretzels, you can mix them with the cereal at this stage. Be gentle when tossing everything together so you don’t crush the cereal.

Set the bowl aside while you prepare the caramel.

Step 3: Make the Caramel Sauce

Place the butter, brown sugar, corn syrup, and salt in a medium saucepan.

Heat the mixture over medium heat, stirring occasionally as the butter melts and the ingredients come together.

Once the mixture reaches a steady boil, allow it to boil for about 2–3 minutes, stirring frequently. The mixture should look smooth, glossy, and slightly thickened.

Remove the saucepan from the heat.

Carefully stir in the vanilla extract. The mixture may bubble briefly when the vanilla is added.

Next, add the baking soda and stir until it is completely incorporated.

The caramel may become lighter and slightly foamy. This is normal. The baking soda helps create a lighter coating that spreads more easily over the cereal.
