Caramel deLites: A Decadent Coconut-Caramel Cookie You Can Make at Home

Caramel deLites—also widely known as Samoas—are one of those irresistible treats that strike the perfect balance between chewy, crispy, sweet, and chocolatey. With a buttery cookie base, a rich caramel-coconut topping, and a drizzle of smooth chocolate, they’re a bakery-style indulgence you can recreate right in your own kitchen.

This detailed guide will walk you through every step of making homemade Caramel deLites from scratch.

🧾 Ingredients

For the cookie base:

  • 1 cup (225g) unsalted butter, softened
  • ½ cup (100g) granulated sugar
  • 2 cups (250g) all-purpose flour
  • ¼ teaspoon salt
  • ½ teaspoon vanilla extract

For the topping:

  • 2 cups shredded sweetened coconut
  • 1½ cups soft caramels (store-bought or homemade)
  • 3 tablespoons milk or heavy cream
  • ¼ teaspoon salt

For the chocolate coating:

  • 1½ cups semi-sweet chocolate chips

🍪 Step 1: Make the Cookie Base

  1. In a large mixing bowl, cream together the butter and sugar until light and fluffy (about 2–3 minutes).
  2. Add the vanilla extract and mix again.
  3. In a separate bowl, combine flour and salt.
  4. Gradually add the dry ingredients to the butter mixture until a soft dough forms.

👉 The dough should be smooth and not sticky. If it feels too soft, chill it for 20–30 minutes.

🔵 Step 2: Shape the Cookies

  1. Roll the dough out on a lightly floured surface to about ¼ inch thickness.
  2. Use a round cookie cutter (or a glass) to cut circles.
  3. Use a smaller cutter or the back of a piping tip to create a hole in the center.

👉 This gives the cookies their classic ring shape.

  1. Place them on a lined baking tray.

🔥 Step 3: Bake

  • Preheat your oven to 175°C (350°F).
  • Bake for 10–12 minutes, or until the edges are lightly golden.
  • Let the cookies cool completely before adding toppings.
