Ingredients

For the Cheeseburger Filling

  • 1 pound ground beef
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tablespoon butter or olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons ketchup
  • 1 teaspoon yellow mustard (optional)

For Assembly

  • 2 sleeves Ritz crackers (about 50–60 crackers)
  • 1 ½ cups shredded cheddar cheese
  • ½ cup shredded mozzarella cheese (optional)
  • 2 tablespoons chopped pickles (optional)
  • ¼ cup cooked bacon pieces (optional)
  • Fresh parsley or green onions for garnish

Optional Dipping Sauces

  • Burger sauce
  • Ketchup
  • Mustard
  • Ranch dressing
  • Barbecue sauce
  • Spicy mayonnaise

Step 1: Prepare the Baking Tray

Preheat your oven to 375°F (190°C).

Line a large baking sheet with parchment paper or lightly grease it.

Arrange the Ritz crackers in a single layer on the tray. Leave a small amount of space between each cracker so they bake evenly and the cheese does not stick too much between the bites.

The crackers will become the crispy “bun” of your mini cheeseburgers.


Step 2: Cook the Ground Beef

Heat a large skillet over medium heat.

Add butter or olive oil, then add the diced onion. Cook for 2–3 minutes until the onion becomes soft and slightly translucent.

Add the minced garlic and cook for about 30 seconds until fragrant.

Add the ground beef to the skillet. Break it apart with a wooden spoon and cook until browned completely.

Make sure the beef is cooked evenly and no pink remains.


Step 3: Season the Cheeseburger Meat

Once the beef is cooked, drain any excess grease from the pan.

Add:

  • Salt
  • Black pepper
  • Paprika
  • Garlic powder
  • Onion powder
  • Worcestershire sauce
  • Ketchup
  • Mustard (if using)

Stir everything together and cook for another 2–3 minutes.

The ketchup adds a slight sweetness, while Worcestershire sauce gives the beef a deeper, savory burger flavor.

The finished beef mixture should be flavorful but not too wet. If there is too much liquid, continue cooking for another minute until it thickens.


Step 4: Add the Beef to the Ritz Crackers

Place a small spoonful of the cooked beef mixture onto each Ritz cracker.

Do not add too much filling because the crackers need to stay stable and easy to pick up.

Gently press the beef down so it sticks to the cracker.

A small amount of filling is enough because the flavor becomes stronger once combined with the cheese.


Step 5: Add Cheese

Sprinkle shredded cheddar cheese over each beef-topped cracker.

For extra creaminess, combine cheddar with mozzarella.

Cheddar gives the classic cheeseburger flavor, while mozzarella helps create a stretchy melted topping.

Make sure each bite gets enough cheese to cover the beef.
