Cheesy Asparagus Casserole: A Creamy, Comforting Vegetable Dish

Cheesy Asparagus Casserole is a rich, comforting side dish that transforms simple asparagus into something warm, creamy, and irresistible. With tender asparagus baked in a smooth cheese sauce and topped with a golden crust, this casserole is perfect for family dinners, holiday meals, or whenever you want to add a satisfying vegetable dish to the table. The combination of fresh asparagus, creamy sauce, and melted cheese creates a delicious balance of flavor and texture.

Below is a detailed step-by-step guide to making this comforting casserole from scratch.

Ingredients

To prepare this dish, you will need:

  • 1½ pounds fresh asparagus
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • ½ cup heavy cream
  • 1½ cups shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and black pepper to taste
  • ½ cup breadcrumbs or crushed crackers
  • 1 tablespoon melted butter (for topping)

Step 1: Prepare the Asparagus

Start by washing the asparagus thoroughly under cold water to remove any dirt or grit. Trim off the tough, woody ends of the stalks, usually about 1–2 inches from the bottom.

Cut the asparagus into pieces about 2 inches long. This size makes the casserole easier to serve and ensures the asparagus cooks evenly.

Step 2: Blanch the Asparagus

Bring a pot of salted water to a boil. Add the asparagus pieces and cook them for about 2–3 minutes. This quick blanch softens the asparagus slightly while preserving its bright green color.

Immediately drain the asparagus and place it in a bowl of cold water to stop the cooking process. Once cooled, drain again and set aside.
