Cheesy Bacon Hash Brown Bombs
If you love the combination of crispy potatoes, smoky bacon, and gooey melted cheese, these Cheesy Bacon Hash Brown Bombs are the kind of snack that disappears almost as quickly as you put it on the table. They’re golden and crunchy on the outside, while the center is packed with savory bacon and warm, melty cheese.
These little potato bites are perfect for breakfast, brunch, game-day gatherings, parties, or simply as a fun comfort-food snack. The best part is that they use simple ingredients and don’t require complicated cooking techniques.
Why You’ll Love These Hash Brown Bombs
There’s something especially satisfying about biting through a crisp potato exterior and reaching a cheesy center. The bacon adds a salty, smoky flavor that makes the filling even more delicious.
Another advantage is their versatility. You can prepare them ahead of time, customize the cheese or seasonings, and serve them with different dipping sauces.
The texture is what really makes them special: crispy on the outside, soft and cheesy inside, with little bits of bacon throughout.
Ingredients
For about 12–14 hash brown bombs, you’ll need:
- 3 cups frozen shredded hash browns, thawed
- 6 slices bacon
- 1 cup shredded cheddar cheese
- 2 tablespoons grated Parmesan cheese
- 1 large egg
- 2 tablespoons all-purpose flour
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon chopped fresh parsley, optional
- Cooking spray or a small amount of oil
For Serving
Try serving them with:
- Ranch dressing
- Sour cream
- Ketchup
- Garlic-herb dip
- Spicy mayonnaise
- Chives and sour cream
Step 1: Prepare the Bacon
Start by cooking the bacon in a skillet over medium heat until it becomes nicely crisp.
Transfer it to a paper towel-lined plate and allow it to cool enough to handle. Once cooled, crumble or finely chop the bacon into small pieces.
You want relatively small pieces so that the bacon distributes evenly throughout the potato mixture.
Tip: Don’t leave the bacon overly greasy. Excess grease can make the hash brown mixture difficult to shape.
Step 2: Prepare the Hash Browns
Thaw the frozen hash browns completely.
This step is important because frozen potatoes contain additional moisture. Place the thawed hash browns in a clean kitchen towel or several layers of paper towels and gently squeeze out as much excess moisture as possible.
The drier the potatoes are, the easier they will be to shape and the crispier the finished bombs will become.
Place the drained hash browns into a large mixing bowl.
Step 3: Make the Potato Mixture
Add the chopped bacon, shredded cheddar, Parmesan, egg, flour, garlic powder, onion powder, smoked paprika, salt, and black pepper to the bowl.
If you’re using parsley, add it now as well.
Mix everything thoroughly until the ingredients are evenly combined.
The mixture should hold together when you press it between your fingers. If it seems excessively wet or loose, add another small spoonful of flour.
Step 4: Shape the Hash Brown Bombs
Take approximately 2 tablespoons of the potato mixture and flatten it gently in your palm.
Place a small amount of shredded cheddar in the center.
Carefully bring the potato mixture around the cheese, completely enclosing it. Roll it gently between your hands to form a compact ball.
Repeat with the remaining mixture.
Try not to make the balls too large. Smaller, tightly packed portions cook more evenly and are easier to keep sealed around the cheese.
