Cheesy Bacon Loaded Mashed Potato Balls: A Crispy, Creamy Step-by-Step Recipe

Cheesy Bacon Loaded Mashed Potato Balls are a delicious comfort-food snack made with creamy mashed potatoes, crispy bacon, melted cheese, green onions, and a crunchy golden coating. They taste like loaded baked potatoes, but in bite-sized fried or baked form. The outside is crisp and golden, while the inside is soft, cheesy, savory, and rich.

This recipe is perfect for using leftover mashed potatoes, but you can also make fresh mashed potatoes just for this dish. These potato balls are great as party appetizers, game-day snacks, side dishes, or a fun family treat.

Why This Recipe Is So Good

The best part of Cheesy Bacon Loaded Mashed Potato Balls is the texture contrast. The outside has a crunchy breadcrumb coating, while the inside stays creamy and filled with melted cheese. Bacon adds smoky flavor, cheddar gives richness, and green onions add a fresh bite.

They are also very flexible. You can fry them for the crispiest result, bake them for a lighter version, or cook them in an air fryer for a good balance between crispy and easy.

Ingredients

  • 3 cups mashed potatoes, chilled
  • 1 cup shredded cheddar cheese
  • ½ cup cooked bacon, chopped into small pieces

  • ½ teaspoon paprika
  • Salt to taste
  • 1 tablespoon chopped parsley, optional

For the Coating

  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 tablespoons milk
  • 1 ½ cups breadcrumbs or panko breadcrumbs
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

For Cooking

  • Oil for frying, if deep-frying or pan-frying
  • Cooking spray, if baking or air-frying

Optional Dipping Sauces

  • Sour cream
  • Ranch dressing
  • Garlic aioli
  • Spicy mayo
  • Cheese sauce
  • Barbecue sauce

Step 1: Prepare the Mashed Potatoes

For the best result, use cold mashed potatoes. Chilled potatoes are firmer, easier to shape, and less likely to fall apart during cooking.

If you are making fresh mashed potatoes, boil peeled potatoes until tender, drain them very well, then mash them with butter, salt, pepper, and a small amount of milk. Do not make them too loose or creamy, because soft mashed potatoes will be harder to roll into balls.

Once mashed, chill the potatoes in the refrigerator for at least 1 hour before using.

Step 2: Cook the Bacon

Place the bacon in a skillet over medium heat and cook until crispy.

Transfer the bacon to a paper towel-lined plate to remove excess grease. Let it cool, then chop it into small pieces.

Crispy bacon works best because it adds texture and smoky flavor without making the potato filling oily.

Step 3: Make the Loaded Potato Filling

In a large bowl, combine the chilled mashed potatoes, shredded cheddar cheese, chopped bacon, sliced green onions, cream cheese, garlic powder, onion powder, black pepper, paprika, and parsley if using.

Mix everything together until evenly combined.

Taste the mixture before adding extra salt. Bacon and cheese are already salty, so you may only need a little.

The filling should be thick enough to hold its shape. If it feels too soft, add a few tablespoons of breadcrumbs or grated parmesan to firm it up.
