Cheesy Broccoli Noodle Casserole: A Creamy, Comforting Step-by-Step Recipe
Cheesy Broccoli Noodle Casserole is a warm, creamy, family-style dish made with tender noodles, fresh or frozen broccoli, a rich cheese sauce, and a golden baked topping. It is the kind of recipe that feels simple, cozy, and satisfying, but still has enough flavor to make it special.
This casserole is perfect for weeknight dinners, potlucks, holiday side dishes, or meal prep. It can be served as a main dish on its own or as a side with chicken, beef, fish, or roasted vegetables. The creamy sauce coats every noodle, the broccoli adds freshness and color, and the melted cheese brings everything together.
Why This Casserole Works So Well
The best casseroles have a balance of texture and flavor. In this recipe, the noodles give a soft and hearty base, the broccoli adds a slightly crisp vegetable bite, and the cheese sauce makes the dish creamy and rich.
The topping is also important. A simple layer of breadcrumbs, crushed crackers, or extra cheese creates a golden finish that contrasts beautifully with the creamy inside.
Ingredients
For the Casserole
- 12 oz egg noodles, rotini, penne, or elbow pasta
- 4 cups broccoli florets, fresh or frozen
- 3 tablespoons butter
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 3 tablespoons all-purpose flour
- 2 cups milk
- 1 cup heavy cream or half-and-half
- 2 cups shredded cheddar cheese
- ½ cup mozzarella cheese
- ½ cup sour cream or cream cheese
- 1 teaspoon salt, or to taste
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon paprika
- ½ teaspoon mustard powder, optional
For the Topping
- ½ cup breadcrumbs or crushed buttery crackers
- 2 tablespoons melted butter
- ½ cup shredded cheddar cheese
- 1 tablespoon grated parmesan cheese, optional
Step 1: Prepare the Baking Dish
Preheat your oven to 375°F / 190°C.
Grease a medium or large baking dish with butter or cooking spray. A 9×13 inch dish works well for this recipe.
Greasing the dish prevents the noodles and cheese from sticking and makes serving easier later.
Step 2: Cook the Noodles
Bring a large pot of salted water to a boil.
Add the noodles and cook them until they are just al dente. This means they should be cooked but still slightly firm.
Do not overcook the noodles because they will continue cooking in the oven. If they are too soft before baking, the casserole can become mushy.
Drain the noodles and set them aside.
Step 3: Prepare the Broccoli
If using fresh broccoli, cut it into small florets. Add the broccoli to boiling water for about 2 minutes, then drain it.
If using frozen broccoli, thaw it first and drain away extra water.
The broccoli should be slightly tender but not fully soft. It will finish cooking in the casserole.
Dry the broccoli as much as possible before adding it to the dish. Too much water can make the casserole thin and watery.
Step 4: Make the Flavor Base
Place a large skillet or saucepan over medium heat.
Add the butter and let it melt. Add the chopped onion and cook for 3 to 4 minutes until soft and lightly golden.
Add the minced garlic and cook for another 30 seconds until fragrant.
This step gives the casserole a deeper homemade flavor. Garlic and onion make the cheese sauce taste richer and more savory.
