Cheesy Ground Beef Casserole: A Hearty Step-by-Step Comfort Food Recipe

Cheesy Ground Beef Casserole is a warm, filling, family-style dish made with seasoned ground beef, tender pasta or potatoes, tomato sauce, vegetables, and plenty of melted cheese. It is the kind of recipe that feels simple, rich, and comforting at the same time. Everything is baked together until the top becomes golden and bubbly, while the inside stays saucy, cheesy, and satisfying.

This casserole is perfect for busy weeknights, family dinners, meal prep, potlucks, or whenever you want an easy homemade dish that does not require complicated cooking skills. It uses everyday ingredients, but the final result tastes cozy and delicious.

Why This Casserole Is So Good

The beauty of this recipe is the balance of flavor and texture. The ground beef gives the dish a hearty, savory base. The sauce keeps everything moist. The pasta or potatoes make it filling, and the cheese melts into every layer, creating that creamy, comforting casserole texture.

It is also very flexible. You can make it with pasta, rice, potatoes, or even mixed vegetables. You can keep it mild for kids or add spice for a stronger flavor.

Ingredients

Main Ingredients

  • 1 ½ pounds ground beef
  • 2 cups cooked pasta, rice, or diced cooked potatoes
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 can diced tomatoes, about 14–15 oz
  • 1 can tomato sauce, about 15 oz
  • 2 tablespoons tomato paste
  • 1 cup corn, peas, or mixed vegetables
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon chili flakes, optional
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup sour cream or cream cheese, optional for extra creaminess
  • 2 tablespoons chopped parsley for garnish

Step 1: Prepare the Base Ingredient

First, choose whether you want to make the casserole with pasta, rice, or potatoes.

For pasta, boil it in salted water until it is just al dente. Do not overcook it, because it will continue cooking in the oven. Drain it and set it aside.

For rice, use cooked white rice or brown rice.

For potatoes, dice them into small cubes and boil them until just tender.

This base ingredient gives the casserole body and helps absorb the sauce and cheese.

Step 2: Preheat the Oven

Preheat your oven to 375°F / 190°C.

Lightly grease a large baking dish with oil or butter. A 9×13 inch baking dish works well for this recipe.

Greasing the dish prevents sticking and makes serving easier later.

Step 3: Cook the Onion and Garlic

Place a large skillet over medium heat and add olive oil.

Add the chopped onion and cook for 3 to 4 minutes until it becomes soft and slightly golden.

Add the minced garlic and cook for another 30 seconds. Stir constantly so the garlic does not burn.

This step builds the first layer of flavor. Onion adds sweetness, while garlic gives the casserole a warm savory taste.
