Cheesy Ground Beef Cracker Bites: A Crispy, Savory Party Snack Recipe
Cheesy Ground Beef Cracker Bites are a quick, flavorful appetizer made with buttery round crackers, seasoned ground beef, and melted cheese. They are crispy on the bottom, savory in the middle, and golden-cheesy on top. The dish in the picture looks like a simple comfort-food snack that is perfect for parties, game nights, family gatherings, or even a fun weekend treat.
These bites are easy to make because they use basic ingredients, but they taste rich and satisfying. The crackers act like mini bases, the beef adds hearty flavor, and the cheese melts over the top to hold everything together.
Why This Recipe Works
The best part of this recipe is the texture. The cracker stays crisp and buttery, while the ground beef is juicy and well-seasoned. When the cheese melts, it creates a golden topping that makes each bite taste like a mini cheeseburger or loaded beef snack.
This recipe is also very flexible. You can keep it simple with beef and cheddar, or you can add onions, garlic, jalapeños, pickles, bacon, or different sauces to create your own version.
Ingredients
For the Beef Filling
- 1 pound ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon butter or oil
- 1 teaspoon salt, or to taste
- ½ teaspoon black pepper
- 1 teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 teaspoon Worcestershire sauce
- 1 tablespoon ketchup, optional
- 1 teaspoon mustard, optional
For Assembling
- 35 to 40 buttery round crackers
- 1 ½ cups shredded cheddar cheese
- ½ cup mozzarella cheese, optional
- Chopped parsley or green onions, optional for garnish
Optional Add-Ins
- Cooked bacon bits
- Diced pickles
- Jalapeños
- Hot sauce
- Taco seasoning
- Barbecue sauce
- Cream cheese
Step 1: Prepare the Baking Tray
Preheat your oven to 375°F / 190°C.
Line a baking tray with parchment paper. This makes cleanup easier and prevents melted cheese from sticking to the tray.
Arrange the crackers in a single layer on the baking tray. Leave a little space between each cracker so the cheese can melt without sticking everything together too much.
Step 2: Cook the Ground Beef
Place a skillet over medium heat and add butter or oil.
Add the chopped onion and cook for 2 to 3 minutes until soft and lightly golden. Then add the minced garlic and cook for another 30 seconds.
Add the ground beef to the skillet. Break it apart with a spoon and cook until browned.
Stir often so the beef cooks evenly and does not form large clumps.
Step 3: Season the Beef
Once the beef is fully browned, drain any excess grease from the pan.
Add salt, black pepper, paprika, garlic powder, onion powder, and Worcestershire sauce. Stir well so the seasoning coats the meat evenly.
For a cheeseburger-style flavor, add ketchup and mustard. For a smoky flavor, add a spoon of barbecue sauce. For a spicy version, add chili flakes or hot sauce.
Let the beef cook for another 2 minutes so the flavors come together.
