Cheesy Mashed Potato Casserole

There is something wonderfully comforting about a casserole made with creamy mashed potatoes and plenty of melted cheese. Cheesy Mashed Potato Casserole takes the familiar goodness of homemade mashed potatoes and turns it into a rich, golden, bubbling side dish that is perfect for family dinners, holidays, potlucks, or any meal that calls for a little extra comfort.

The potatoes are mashed until smooth and creamy, combined with butter, milk, sour cream, and seasonings, then layered with generous amounts of cheese before being baked until the top is beautifully golden. The result is soft and creamy in the center with a deliciously cheesy crust around the edges.

Why You’ll Love This Casserole

This recipe is easy enough for a weeknight but special enough for a holiday table. It can also be prepared ahead of time, making it especially convenient when you’re cooking several dishes at once.

The combination of fluffy potatoes, creamy dairy, savory seasonings, and melted cheese creates a dish that pairs beautifully with roasted chicken, turkey, beef, pork, or vegetables.

Ingredients

  • 3 pounds russet or Yukon Gold potatoes
  • 4 tablespoons unsalted butter, divided
  • 1/2 cup sour cream
  • 1/2 cup whole milk, warmed
  • 1 large egg
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1/2 cup shredded mozzarella cheese
  • 2 cloves garlic, finely minced
  • 1 teaspoon salt, plus more for the cooking water
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 2 tablespoons chopped fresh parsley or green onions, optional

Step 1: Prepare the Potatoes

Peel the potatoes and cut them into evenly sized chunks. Keeping the pieces similar in size helps them cook at the same rate.

Place the potatoes in a large pot and cover them with cold water. Add a generous pinch of salt to the water.

Bring the pot to a boil over medium-high heat. Once boiling, reduce the heat slightly and cook the potatoes for about 15–20 minutes, or until they can be easily pierced with a fork.

Avoid overcooking them because potatoes that absorb too much water can produce a watery or gummy mash.

Step 2: Drain the Potatoes Well

Once the potatoes are tender, drain them thoroughly in a colander.

Let them sit for a minute or two so excess moisture can evaporate. This small step helps create a richer and creamier casserole.

Return the potatoes to the warm pot.
