Cheesy Sausage Biscuit Casserole: A Cozy, Hearty Breakfast Everyone Will Love

There are few things more comforting than a hot, bubbling breakfast casserole coming out of the oven. This Cheesy Sausage Biscuit Casserole combines savory sausage, fluffy refrigerated biscuits, creamy eggs, and plenty of melted cheese in one satisfying dish.

It is especially convenient when you want something hearty without standing over the stove making individual breakfasts. Everything comes together in a single baking dish, making this casserole a great choice for lazy weekend mornings, family breakfasts, brunch gatherings, or even a make-ahead meal for busy weekdays.

The biscuits soak up some of the flavorful egg mixture while remaining soft and tender, while browned sausage adds a savory, meaty bite throughout. A generous layer of melted cheese brings everything together.

Ingredients

For approximately 8 servings, you will need:

  • 1 pound breakfast sausage
  • 1 can refrigerated biscuit dough, preferably 8 biscuits
  • 8 large eggs
  • 1 cup whole milk
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 2 tablespoons chopped fresh parsley or green onions, optional
  • Cooking spray or a little butter for greasing the baking dish

Choosing the Best Sausage

Traditional breakfast sausage works particularly well because its savory seasoning complements the eggs and cheese. You can use mild sausage for a classic flavor or a slightly spicy variety if you prefer more heat.

If using sausage links rather than loose breakfast sausage, remove the casings before cooking.

Step 1: Prepare the Oven and Baking Dish

Begin by preheating your oven to 375°F (190°C).

Lightly grease a 9-by-13-inch baking dish with cooking spray or butter. Greasing the dish helps prevent the eggs and cheese from sticking and makes serving much easier later.

Set the prepared dish aside while you make the filling.

Step 2: Brown the Sausage

Place a large skillet over medium heat and add the breakfast sausage.

Cook for approximately 6–8 minutes, breaking the sausage apart with a wooden spoon or spatula as it cooks. Continue until the sausage is browned and fully cooked.

If there is a large amount of excess grease in the skillet, carefully drain it.

Let the sausage cool for a few minutes while you prepare the remaining ingredients.

Helpful Tip

Don’t leave the sausage in large chunks. Breaking it into smaller pieces allows the sausage flavor to spread throughout the casserole, so almost every bite contains a little bit of that savory filling.

Step 3: Cut the Biscuits

Open the refrigerated biscuit dough and separate the biscuits.

Cut each biscuit into approximately 4 smaller pieces.

Spread the biscuit pieces evenly across the bottom of the prepared baking dish.

Try not to pile the pieces heavily on top of one another. Keeping them relatively evenly distributed allows the egg mixture to reach all of the biscuits as the casserole bakes.

Step 4: Add the Cooked Sausage

Scatter the browned sausage evenly over the biscuit pieces.

At this point, you should have a layer of biscuit pieces topped with savory sausage.

For an especially balanced casserole, distribute the sausage from edge to edge rather than concentrating it in the center.

Step 5: Make the Egg Mixture

Crack the eggs into a large mixing bowl.

Add:

  • Milk
  • Dijon mustard
  • Garlic powder
  • Onion powder
  • Salt
  • Black pepper

Whisk everything together until the eggs are completely blended and the mixture looks smooth.

The Dijon mustard doesn’t make the casserole taste strongly of mustard. Instead, it adds a subtle savory depth that helps balance the richness of the sausage and cheese.
