Cheesy Sausage Breakfast Casserole: A Hearty Make-Ahead Morning Recipe
Cheesy Sausage Breakfast Casserole is a warm, filling breakfast dish made with savory sausage, fluffy eggs, melted cheese, bread or hash browns, and simple seasonings. It is the kind of recipe that feels comforting, practical, and satisfying all at once. You can prepare it for weekend brunch, holiday mornings, family gatherings, or meal prep for busy weekdays.
What makes this casserole so useful is that it can be assembled ahead of time and baked when needed. The sausage brings rich flavor, the eggs hold everything together, and the cheese melts into every layer. The result is a golden breakfast bake with crispy edges, a soft center, and a cheesy, savory taste in every bite.
Why This Breakfast Casserole Works
A good breakfast casserole should be flavorful but not complicated. This recipe works because the ingredients support each other. The sausage adds seasoning and richness, the eggs create a soft custard-like base, the cheese gives creaminess, and the bread or potatoes provide structure.
You can make it simple with just sausage, eggs, and cheese, or you can add vegetables, herbs, peppers, onions, or different cheeses. It is flexible, easy to slice, and perfect for serving a group.

- 1 small onion, finely chopped
- 1 small bell pepper, diced
- 2 cloves garlic, minced
- 1 teaspoon salt

- ½ teaspoon onion powder

Optional Add-Ins
- Cooked bacon pieces
- Mushrooms

- Pepper Jack cheese
Step 1: Prepare the Baking Dish
Start by greasing a 9×13-inch baking dish with butter or non-stick spray.
This helps prevent the eggs and cheese from sticking to the bottom and sides of the pan.
Preheat the oven to 350°F / 175°C if you plan to bake the casserole immediately. If you are preparing it overnight, you can preheat the oven the next morning.
Step 2: Cook the Sausage
Place a large skillet over medium heat.
Add the breakfast sausage and break it apart with a spoon or spatula. Cook until the sausage is browned and no longer pink.
This usually takes about 6 to 8 minutes.
If the sausage releases too much grease, drain the excess fat. Leave just a small amount in the pan for flavor.
The sausage should be cooked before going into the casserole because it will not have enough time to fully brown inside the egg mixture.
Step 3: Add Onion, Pepper, and Garlic
After the sausage is browned, add the chopped onion and bell pepper to the same skillet.
Cook for 3 to 4 minutes until the vegetables soften slightly.
Add the minced garlic and cook for another 30 seconds.
This step builds flavor. Cooking the vegetables first removes excess moisture and keeps the casserole from becoming watery.
Remove the skillet from the heat and let the sausage mixture cool for a few minutes.
Step 4: Prepare the Base Layer
Place the cubed bread, hash browns, or diced potatoes into the greased baking dish.
If using bread, slightly stale bread works best because it absorbs the egg mixture without becoming too mushy.
If using frozen hash browns, thaw them first and squeeze out extra moisture.
If using diced potatoes, make sure they are already cooked or partially cooked before adding them to the dish.
Spread the base evenly across the bottom of the baking dish.
