For the Filling
- 1 ½ pounds ground lamb
- 1 tablespoon olive oil
- 1 medium yellow onion, finely diced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 tablespoon all-purpose flour
- 1 ½ cups beef or lamb broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- ½ teaspoon salt, or to taste
- ½ teaspoon freshly ground black pepper
- 1 cup frozen peas
- ½ cup frozen corn
- 1 tablespoon chopped fresh parsley
For the Cheesy Potato Topping
- 2 pounds russet or Yukon Gold potatoes, peeled and cut into chunks
- 4 tablespoons butter
- ½ cup warm milk
- ½ cup sour cream
- 1 cup shredded sharp cheddar cheese
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon garlic powder
- ½ cup additional shredded cheddar cheese for the top
Step-by-Step Method
1. Prepare the Potatoes
Begin by placing the peeled and chopped potatoes in a large pot. Cover them with cold, salted water and bring the water to a boil over medium-high heat.
Cook the potatoes for about 15–20 minutes, or until they are completely tender when pierced with a fork.
Drain them thoroughly and let them sit in the hot pot for a minute or two. This allows excess moisture to evaporate and helps prevent watery mashed potatoes.
2. Make the Cheesy Mashed Potatoes
While the potatoes are still hot, add the butter and mash until smooth.
Gradually add the warm milk and sour cream, mixing until the potatoes become creamy. Avoid overmixing, as this can make mashed potatoes sticky.
Stir in 1 cup of shredded cheddar cheese, salt, black pepper, and garlic powder. Taste and adjust the seasoning if necessary.
Set the cheesy mashed potatoes aside while you prepare the filling.
3. Brown the Lamb
Heat the olive oil in a large oven-safe skillet or heavy-bottomed pan over medium-high heat.
Add the ground lamb and cook for approximately 6–8 minutes, breaking it apart with a wooden spoon as it cooks. Continue until the lamb is browned and no longer pink.
If there is a large amount of excess fat in the pan, carefully drain some of it, leaving enough to help flavor the vegetables.
4. Cook the Vegetables
Add the diced onion, carrots, and celery to the browned lamb.
Cook for about 5–7 minutes, stirring occasionally, until the vegetables begin to soften.
Add the minced garlic and cook for another 30–60 seconds, just until fragrant.
Cooking the vegetables before adding the liquid gives them a deeper flavor and helps them blend naturally into the filling.
