Chicken Broccoli Rice Casserole

Chicken Broccoli Rice Casserole is the kind of comforting, satisfying dinner that brings together simple ingredients in one hearty dish. Tender chicken, fluffy rice, vibrant broccoli, and a creamy, savory sauce are baked together until everything is hot, bubbling, and perfectly blended. It is easy enough for a weeknight dinner but cozy enough to serve when you want something that feels homemade and special.

The best part is how adaptable this casserole can be. You can use leftover cooked chicken, freshly prepared chicken, or even shredded rotisserie chicken. Broccoli adds freshness and texture, while rice makes the casserole filling enough to stand on its own. A generous layer of melted cheese on top finishes everything beautifully.

Ingredients

  • 2 cups cooked white rice
  • 2 cups cooked chicken, shredded or cut into bite-sized pieces
  • 3 cups broccoli florets
  • 1 can (10.5 ounces) condensed cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup chicken broth
  • 1 cup shredded cheddar cheese, plus extra for topping
  • 1/2 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tablespoon butter or olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon dried thyme
  • 1/2 cup breadcrumbs, optional

Step 1: Prepare the Rice

Start with cooked rice that has cooled slightly. White rice works particularly well, but brown rice can also be used if you prefer a heartier texture.

If preparing the rice specifically for the casserole, cook it according to the package directions and allow it to steam for a few minutes before fluffing it with a fork. Avoid making the rice overly soft because it will continue cooking in the oven.
