Chocolate Caramel Carmelita Bars
Chocolate Caramel Carmelita Bars are the kind of dessert that combines several irresistible textures in one bite: buttery oat crumble, rich chocolate, and a smooth layer of caramel tucked between golden layers. They are chewy in the center, slightly crisp around the edges, and wonderfully indulgent without requiring complicated baking techniques.
These bars are especially good when you want a dessert that can be prepared ahead of time. Once chilled and sliced, they hold their shape beautifully, making them perfect for parties, bake sales, holiday dessert tables, or an everyday sweet treat.
Why You’ll Love These Carmelita Bars
There is something special about the combination of oats, chocolate, and caramel. The oats provide a toasted, buttery base, while the chocolate adds richness and the caramel brings a soft, sweet center.
The recipe is also relatively simple. Instead of making a separate cookie dough and caramel candy from scratch, the layers are assembled in stages and baked together. The result looks impressive but is surprisingly straightforward.
Ingredients
For the Oat Crust and Topping
- 1 cup unsalted butter, melted
- 1 cup packed brown sugar
- 1 teaspoon vanilla extract
- 1 ¾ cups old-fashioned rolled oats
- 1 ¼ cups all-purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
For the Chocolate Layer
- 1 cup semisweet chocolate chips
- ½ cup milk chocolate chips, optional
- ½ cup chopped pecans or walnuts, optional
For the Caramel Layer
- 1 cup soft caramel candies, unwrapped
- ½ cup heavy cream
You can also use a thick prepared caramel sauce if you prefer, although a soft caramel mixture gives the bars a particularly rich and chewy center.
Step-by-Step Method
Step 1: Prepare the Baking Pan
Begin by preheating your oven to 350°F (175°C).
Line an 8×8-inch baking pan with parchment paper, leaving some parchment hanging over two sides. This makes it much easier to lift the finished bars from the pan later.
Lightly grease the parchment and the exposed sides of the pan.
Step 2: Make the Oat Mixture
In a large mixing bowl, combine the melted butter and brown sugar.
Whisk until the mixture looks smooth and glossy. Add the vanilla extract and stir again.
In a separate bowl, combine the rolled oats, flour, baking soda, and salt.
Gradually add the dry ingredients to the butter mixture. Stir until everything is evenly moistened and a soft, crumbly mixture forms.
The mixture should resemble a thick oatmeal cookie crumble rather than a pourable batter.
Step 3: Bake the First Layer
Set aside approximately 1 cup of the oat mixture for the topping.
Press the remaining mixture firmly into the bottom of the prepared pan. Use the back of a spoon or the bottom of a measuring cup to create an even layer.
Bake for approximately 10–12 minutes, just until the base begins to turn lightly golden.
Don’t overbake it at this stage. The crust will return to the oven later.
