Chocolate Caramel Coconut Bars
Chocolate Caramel Coconut Bars are the kind of dessert that combines several irresistible textures in one bite. A buttery crumb base is layered with sweet, chewy coconut and rich caramel, then finished with a smooth layer of chocolate. The result is a decadent bar that is crisp around the edges, soft in the center, and wonderfully chewy.
These bars are perfect for holidays, bake sales, dessert tables, afternoon treats, or whenever you want an easy homemade dessert that looks impressive without requiring complicated decorating.
Why You’ll Love These Bars
There is a lot to enjoy about this recipe. The buttery base provides a sturdy foundation, while the coconut layer adds texture and a subtle toasted flavor. Caramel brings a deep, buttery sweetness, and the chocolate topping balances everything with a slightly bittersweet finish.
The bars can also be prepared ahead of time, making them especially convenient when you are baking for guests or a special occasion.
Ingredients
For the Base
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 cups all-purpose flour
For the Coconut Caramel Layer
- 2 1/2 cups sweetened shredded coconut
- 1 can (11–14 ounces) soft caramel candies
- 3 tablespoons heavy cream
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
For the Chocolate Topping
- 2 cups semi-sweet chocolate chips
- 1 tablespoon coconut oil or shortening
Equipment
- 9 × 13-inch baking pan
- Parchment paper
- Mixing bowls
- Electric mixer
- Rubber spatula
- Small saucepan or microwave-safe bowl
- Sharp knife
Step 1: Prepare the Baking Pan
Preheat your oven to 350°F (175°C).
Line a 9 × 13-inch baking pan with parchment paper, leaving some parchment hanging over the sides. This creates convenient handles that will allow you to lift the finished bars from the pan later.
Lightly grease the parchment and the exposed sides of the pan.
Step 2: Make the Buttery Base
Place the softened butter and granulated sugar in a large mixing bowl. Beat them together until the mixture becomes light and creamy.
Add the vanilla extract and salt, then mix again until evenly combined.
Gradually add the flour, mixing on low speed just until a soft dough forms. Avoid overmixing once the flour has been incorporated, as this can make the base unnecessarily firm.
Step 3: Press and Bake the Base
Transfer the dough to the prepared baking pan.
Use your fingers, the bottom of a measuring cup, or a flat spatula to press the dough evenly across the bottom of the pan. Try to create an even layer so the finished bars have a consistent base.
Bake for approximately 18–22 minutes, or until the edges are lightly golden and the center looks set.
Remove the pan from the oven and allow the crust to cool for several minutes.
Step 4: Toast the Coconut
While the base is baking or cooling, prepare the coconut.
Spread the shredded coconut evenly over a baking sheet. Toast it in the oven for about 5–8 minutes, stirring once or twice to prevent it from browning too quickly.
The coconut should become lightly golden and fragrant. Keep a close eye on it because shredded coconut can go from golden to burnt quickly.
Allow it to cool slightly once toasted.
Step 5: Prepare the Caramel
Place the caramel candies and heavy cream in a small saucepan over low heat.
Stir continuously as the caramel melts. Continue heating gently until the mixture becomes smooth and pourable.
Remove the saucepan from the heat and stir in the vanilla extract and salt.
If the caramel seems too thick to spread, add another small splash of heavy cream and stir until it reaches a smooth consistency.
