HOW TO MAKE CHOCOLATE DEPRESSION CAKE

This chocolate cake is called a Depression Cake because the recipe goes all the way back to the time of the Great Depression. Those who suffer from egg and dairy sensitivities won’t have any problems eating this cake, which is also known as a Crazy Cake or Wacky Cake.

All of my great-grandparents were born in 1917 or 1918. They were old enough during the Great Depression to comprehend the need for rationing and making do without many modern conveniences. They had to make do without the luxuries of cream and sugar, so they learned to drink their coffee without adding either of those things.

It’s interesting since I don’t think they really really painted that era in a negative light. They were still in their teens at the time. I’ll never forget the tales of how they had to shovel their way to school in the snow and assist with tasks around the home. There is no television; instead, there is merely a radio for listening to in the evenings.

This Chocolate Depression Cake was popular during that time period. After merely one bite, you won’t even notice that there are neither eggs nor milk in the dish. It has a deep chocolate taste and is moist throughout. The frosting was left out of the original recipe because there was no need for it. You only need to sprinkle some powdered sugar over the top. If you ask me, we shouldn’t have to go without frosting just because we’re not in a recession.

THE INGREDIENTS LIST:

1 1/2 Cups.Of all-purpose flour.

1 Cup.Of granulated sugar.

1/4 Cup.Of unsweetened cocoa powder.

1/2 Tsp.Of salt.

1 Tsp.Of baking soda.

1 Tsp.Of vanilla extract.

1 Tsp.Of white vinegar.

1/3 Cup.Of vegetable oil.

1 Cup.Of water.

THE FROSTING INGREDIENTS:

2 Tbsp.Of softened butter.

1/4 Cup.Of unsweetened cocoa powder.

1 Cup.Of powdered sugar.

1 Tbsp.Of milk or cream.

1/4 Tsp.Of vanilla extract.

PREPARATION:

1st Step

In a large mixing bowl, combine the dry ingredients (flour, sugar, cocoa powder, salt, and baking soda).

2nd Step

Put the vanilla, vinegar, oil, and water into a separate bowl and mix them together. After adding the wet ingredients to the dry ingredients, mix everything together thoroughly until there are no more lumps.

3rd Step

Pour batter into a square pan that is greased and measures 8 by 8 inches. Bake in a 350-degree oven that has been preheated for 30–35 minutes, or until a toothpick stuck in the middle comes out clean. Wait until the cake is entirely cool before icing it.

FOR MAKING THE FROSTING FOLLOW THESE STEPS:

1st Step

In a low-sided pot, butter should be melted (or in the microwave using a microwave-safe dish.) With the addition of the cocoa powder, the mixture will become rather thick.

2nd Step

Move the chocolate mixture into a basin that’s about the size of a medium mixing bowl. Powdered sugar, milk, and vanilla extract should be added while the mixer is set at a low speed.

3rd Step

Once the ingredients are mixed together, turn the mixer to medium-high speed and beat for about 5 minutes, until the frosting is smooth and creamy, and spread over the top of your cake when it has cooled.
