  • 3–4 tablespoons heavy cream or milk
  • A pinch of salt

Step 1: Prepare the Baking Equipment

Preheat your oven to 350°F (175°C).

Prepare three 8-inch round cake pans by greasing them with butter and lining the bottoms with parchment paper.

The parchment paper makes removing the cake layers easier and prevents them from breaking.

If you only have one pan, you can bake the cakes one at a time.


Step 2: Mix the Dry Ingredients

In a medium bowl, combine:

  • Flour
  • Baking powder
  • Salt
  • Cinnamon, nutmeg, or ginger if using

Whisk everything together until evenly mixed.

Combining the dry ingredients first helps distribute the baking powder and spices evenly throughout the cake.


Step 3: Cream the Butter and Sugar

This step is important because it creates tiny air pockets that help the cake become soft and tender.


Step 4: Add Eggs and Vanilla

Add the eggs one at a time, mixing well after each addition.

Then add the vanilla extract.

The mixture should look smooth and creamy.

Adding eggs gradually helps prevent the batter from separating.


Step 5: Combine the Batter

Add the dry ingredients to the butter mixture in three parts.

Alternate with the milk and sour cream:

  1. Add some flour mixture.
  2. Add some milk.
  3. Add more flour.
  4. Continue until everything is combined.

Mix gently.

Do not overmix the batter because too much mixing can make the cake dense instead of fluffy.

Fold in chocolate chips or crushed peppermint candies if desired.
