A Classic Creamy Egg Salad Sandwich is one of those simple recipes that proves you do not need complicated ingredients to make something satisfying. Tender hard-boiled eggs are chopped and folded into a rich, creamy dressing, then layered between slices of soft bread for an easy lunch, light dinner, or make-ahead meal.
The beauty of egg salad is its flexibility. You can keep it traditional with mayonnaise, mustard, and a little seasoning, or add fresh herbs, crunchy vegetables, or a touch of acidity to give it more personality. The key is getting the eggs cooked properly and balancing the creamy filling with enough seasoning to keep it from tasting flat.
Ingredients
For about 3–4 sandwiches, you will need:
- 6 large eggs
- ⅓ cup mayonnaise
- 1 teaspoon yellow mustard or Dijon mustard
- 1 tablespoon finely chopped celery
- 1 tablespoon finely chopped green onion
- 1 teaspoon finely chopped fresh parsley or chives
- ½ teaspoon salt, or to taste
- ¼ teaspoon black pepper
- ½ teaspoon paprika
- 1 teaspoon lemon juice or pickle juice
- 6–8 slices sandwich bread
- Lettuce leaves, optional
- Thinly sliced tomato, optional
Optional additions
For a slightly different version, consider adding:
- Finely chopped dill pickles for tanginess
- A small spoonful of relish for sweetness
- A pinch of garlic powder for extra savoriness
- A little hot sauce for gentle heat
- Fresh dill for a brighter flavor
Step 1: Cook the Eggs
Place the eggs in a saucepan and cover them with cool water. The water should rise about an inch above the eggs.
Place the saucepan over medium-high heat and bring the water to a full boil. Once boiling, turn off the heat and cover the pan with a lid.
Let the eggs sit in the hot water for about 10–12 minutes.
When the cooking time is finished, carefully transfer the eggs to a bowl of ice water. Allow them to cool for at least 5 minutes.
Why the ice bath matters
The ice bath quickly stops the cooking process and helps prevent the yolks from becoming dry or developing an unattractive greenish ring around the outside.
It also makes the eggs easier to peel.
Step 2: Peel and Chop the Eggs
Once the eggs are cool enough to handle, gently tap each egg against the counter and peel away the shell.

In a medium mixing bowl, combine:

Stir everything together until smooth.
Taste the dressing before adding the eggs. It should be creamy, slightly tangy, and well-seasoned. If it tastes too rich, add a tiny bit more lemon or pickle juice.
