Classic Creamy Macaroni Salad

Classic Creamy Macaroni Salad is one of those timeless side dishes that can turn a simple meal into something special. With tender elbow macaroni, crisp vegetables, and a rich, creamy dressing, it offers a satisfying combination of soft, crunchy, tangy, and slightly sweet flavors.

It is especially popular for picnics, barbecues, potlucks, family gatherings, and holiday meals because it can be prepared ahead of time and served chilled. The secret to making an excellent macaroni salad is not simply mixing pasta with mayonnaise—it is balancing the dressing, seasoning the pasta properly, and giving the finished salad enough time to rest so the flavors can come together.

Why You’ll Love This Macaroni Salad

This recipe has a familiar homemade flavor while still having enough texture and brightness to keep it from feeling heavy. The creamy dressing coats every piece of pasta, while finely chopped vegetables add freshness and crunch.

A small amount of mustard and vinegar gives the dressing a gentle tang, while a touch of sugar rounds everything out. The result is creamy and flavorful without being overwhelmingly rich.

Ingredients

For the Salad

  • 2 cups dry elbow macaroni
  • 1/2 cup finely diced celery
  • 1/2 cup finely diced red bell pepper
  • 1/3 cup finely diced red onion
  • 1/3 cup finely diced carrot
  • 2 tablespoons chopped fresh parsley
  • 2 hard-boiled eggs, chopped, optional

For the Creamy Dressing

  • 3/4 cup mayonnaise
  • 2 tablespoons yellow mustard
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons finely minced sweet pickle relish, optional
  • 2–3 tablespoons milk, as needed

The pickle relish is optional, but it adds a pleasant sweet-and-tangy note that works particularly well with the creamy dressing.

Step 1: Prepare the Pasta

Bring a large pot of generously salted water to a boil. Add the elbow macaroni and cook according to the package directions until tender but still slightly firm.

Avoid overcooking the pasta. Macaroni that becomes too soft can turn mushy after it is mixed with the dressing and chilled.

Once cooked, drain the macaroni thoroughly.

For the best texture, spread the drained pasta into a large bowl or shallow dish and allow it to cool for several minutes. You can also rinse it briefly under cool water if you need to stop the cooking process quickly.

Step 2: Prepare the Vegetables

While the pasta is cooking, prepare the vegetables.

Dice the celery, red bell pepper, red onion, and carrot into small, evenly sized pieces. Keeping the vegetables relatively small allows them to distribute throughout the salad instead of collecting at the bottom of the bowl.

If you are using hard-boiled eggs, chop them into small pieces as well.

The combination of vegetables is flexible. You can add a little more celery for extra crunch or adjust the onion according to your preference.

Step 3: Make the Creamy Dressing

In a separate bowl, combine the mayonnaise, yellow mustard, apple cider vinegar, sugar, salt, and black pepper.

Whisk until the mixture is smooth and evenly combined.

Add the sweet pickle relish if using it. If the dressing seems particularly thick, whisk in milk one tablespoon at a time until it reaches a smooth, spoonable consistency.

Taste the dressing before adding it to the pasta. This is an important step because the dressing should taste slightly stronger than you might expect at first. Once it is mixed with the pasta and vegetables, the flavor will become more mellow.

If you prefer a tangier salad, add a little more vinegar. For a sweeter version, add a small amount of additional sugar.
