Classic Patty Melt Recipe

A timeless diner favorite with crispy bread, juicy beef, and melty cheese

There’s something undeniably comforting about a classic patty melt. Sitting somewhere between a burger and a grilled cheese sandwich, this dish combines seasoned ground beef, caramelized onions, gooey cheese, and buttery toasted bread into one irresistible bite. It’s simple, satisfying, and packed with rich flavor.

Here’s a detailed, step-by-step guide to making the perfect patty melt at home.

Ingredients

For the patties:

  • 450g (1 lb) ground beef (80/20 for best flavor)
  • Salt and black pepper (to taste)

For the onions:

  • 2 large onions, thinly sliced
  • 2 tablespoons butter
  • Pinch of salt

For the sandwich:

  • 8 slices of rye bread (or sourdough if preferred)
  • 4–8 slices of Swiss cheese (or cheddar for variation)
  • 2–3 tablespoons butter (for grilling)

Optional sauce:

  • 3 tablespoons mayonnaise
  • 1 tablespoon ketchup
  • 1 teaspoon mustard

Step 1: Caramelize the Onions

Start with the onions, since they take the longest.

  1. Heat a skillet over medium-low heat and add 2 tablespoons of butter.
  2. Add the sliced onions and a pinch of salt.
  3. Cook slowly, stirring occasionally, for about 20–30 minutes.
  4. The onions should become soft, golden brown, and slightly sweet.

Tip: Don’t rush this step—slow cooking brings out the natural sweetness and depth of flavor.

Step 2: Prepare the Beef Patties

  1. Divide the ground beef into 4 equal portions.
  2. Shape each into a thin oval or square patty (slightly larger than your bread slices, as they will shrink).
  3. Season both sides with salt and pepper.

Why thin patties? Patty melts are meant to be sandwich-style, so thinner patties fit better and cook evenly.

Step 3: Cook the Patties

  1. Heat a skillet or griddle over medium-high heat.
  2. Cook each patty for about 3–4 minutes per side.
  3. Once cooked through, remove from heat and set aside.

You can place a slice of cheese on each patty during the last minute to start melting it.
