Ingredients

For the Batter

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • 1 large egg
  • ¼ cup melted butter
  • 1 tablespoon honey (optional for extra sweetness)

For the Filling

  • 4 to 5 hot dogs
  • ½ cup shredded cheddar cheese (optional)
  • 2 tablespoons chopped chives or green onions (optional)

For the Pan

  • Non-stick cooking spray or butter

Equipment Needed

  • Muffin pan
  • Mixing bowls
  • Measuring cups and spoons
  • Whisk
  • Spoon or cookie scoop
  • Cooling rack

Step 1: Prepare the Oven

Preheat your oven to 375°F (190°C).

Grease a standard 12-cup muffin pan with cooking spray or lightly butter each cup. This helps the muffins release easily after baking.

Step 2: Slice the Hot Dogs

Cut each hot dog into thick rounds, approximately ½ inch wide.

Alternatively, cut them into small cubes if you prefer the meat to be evenly distributed throughout each muffin.

Set aside.

Step 3: Mix the Dry Ingredients

In a large bowl, whisk together:

  • Cornmeal
  • Flour
  • Sugar
  • Baking powder
  • Salt

Mix until evenly combined.

Step 4: Combine the Wet Ingredients

In another bowl, whisk together:

  • Milk
  • Egg
  • Melted butter
  • Honey (if using)

Whisk until smooth.

Step 5: Make the Batter

Pour the wet ingredients into the dry ingredients.

Stir gently until everything is just combined.

Avoid overmixing, as this can make the muffins dense instead of light and fluffy.

If you’re adding shredded cheddar cheese or chopped chives, fold them into the batter now.
