Corned Beef and Potato Bake: A Hearty Step-by-Step Comfort Food Recipe
Corned Beef and Potato Bake is a warm, filling, and satisfying dish made with tender potatoes, savory corned beef, creamy sauce, onions, cheese, and simple seasonings. It is the kind of recipe that turns basic pantry ingredients into a rich homemade meal. The potatoes become soft and comforting, the corned beef adds salty beefy flavor, and the melted cheese on top gives the bake a golden, delicious finish.
This dish is perfect for family dinners, weekend meals, potlucks, or using leftover corned beef. It can be served as a main dish with vegetables or salad, or as a hearty side dish for breakfast, brunch, or dinner.
What Makes Corned Beef and Potato Bake Special?
The beauty of this recipe is its simplicity. Corned beef already has a deep, salty, seasoned flavor, so it works perfectly with mild potatoes. When baked together with onions, cream, and cheese, the ingredients create a casserole-style dish that is rich, cozy, and easy to prepare.
It is also a flexible recipe. You can use canned corned beef, leftover cooked corned beef, sliced deli corned beef, or shredded corned beef. You can make it creamy, cheesy, crispy, or more rustic depending on your preference.
Ingredients
Main Ingredients
- 4 large potatoes, peeled and thinly sliced
- 1 can corned beef, about 12 oz, or 2 cups cooked shredded corned beef
- 1 medium onion, finely sliced
- 2 cloves garlic, minced
- 2 tablespoons butter
- 1 cup heavy cream or whole milk
- ½ cup sour cream, optional for extra creaminess
- 1 cup shredded cheddar cheese
- ½ cup mozzarella cheese, optional
- ½ teaspoon black pepper
- ½ teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon dried parsley or thyme
- Salt to taste, only if needed
- 1 tablespoon chopped fresh parsley for garnish
Optional Add-Ins
- ½ cup cooked peas
- ½ cup corn
- ½ cup chopped bell peppers
- ½ cup cooked carrots
- 1 teaspoon mustard
- ½ cup breadcrumbs for a crispy topping
Step 1: Prepare the Potatoes
Start by washing and peeling the potatoes. Slice them thinly, about ⅛ to ¼ inch thick.
Thin slices cook more evenly and become soft in the oven. If the slices are too thick, the potatoes may stay firm in the center.
After slicing, place the potatoes in cold water for 5 to 10 minutes. This removes some excess starch and helps prevent the slices from sticking together too much.
Drain the potatoes and pat them dry with a clean towel.
Step 2: Prepare the Corned Beef
If you are using canned corned beef, remove it from the can and break it apart with a fork. You can leave it slightly chunky for texture or mash it more finely if you want it to spread evenly through the bake.
If you are using leftover cooked corned beef, shred or chop it into small pieces.
Corned beef is already salty, so be careful when adding extra salt later. It is better to season lightly at first and adjust after tasting.
Step 3: Cook the Onion and Garlic
Place a skillet over medium heat and add the butter.
Once the butter melts, add the sliced onion. Cook for 4 to 5 minutes until the onion becomes soft and lightly golden.
Add the minced garlic and cook for another 30 seconds.
This step gives the bake a deeper flavor. Cooking the onion first makes it sweeter and softer, so it blends better with the potatoes and corned beef.
Step 4: Make the Cream Mixture
In a bowl, mix the heavy cream or milk with sour cream if using.
Add black pepper, paprika, garlic powder, dried parsley or thyme, and a small pinch of salt if needed.
For extra flavor, you can add a teaspoon of mustard. Mustard works very well with corned beef because it cuts through the richness and adds a mild tang.
Stir until the mixture is smooth.
