Cranberry Cheesecake French Toast Casserole
There is something wonderfully comforting about a warm French toast casserole coming out of the oven, especially when it combines buttery bread, creamy cheesecake filling, and bright cranberries. This Cranberry Cheesecake French Toast Casserole takes the familiar flavors of classic French toast and turns them into a rich, festive baked breakfast that is perfect for weekends, holiday mornings, brunch gatherings, or any occasion when you want something a little more special.
The beauty of this casserole is that most of the work can be done ahead of time. Cubes of bread are layered with sweetened cream cheese and tart cranberries, then soaked in a vanilla-scented custard. After resting, the casserole is baked until the top is golden and slightly crisp while the center remains soft, creamy, and custardy.
A dusting of powdered sugar or a drizzle of maple syrup is all you need to finish it.

Choosing the Right Bread
The bread is one of the most important parts of a French toast casserole. Brioche is an excellent choice because it is naturally rich and slightly sweet, but a sturdy French bread, challah, or day-old sandwich bread can also work.
Slightly stale bread is actually preferable because it absorbs the custard without becoming excessively mushy.
If your bread is very fresh, cut it into cubes and spread the pieces over a baking sheet. Leave them uncovered for several hours, or place them in a low oven for a short time to dry them slightly.
Step 1: Prepare the Baking Dish
Preheat your oven to 350°F (175°C).
Lightly grease a 9 × 13-inch baking dish with butter or nonstick cooking spray.
Set the dish aside while you prepare the filling and custard.
Step 2: Make the Cheesecake Filling
Place the softened cream cheese in a medium bowl.
Add the granulated sugar, vanilla extract, and lemon zest. Beat everything together until the mixture becomes smooth and creamy.
The lemon zest is optional, but it adds a subtle brightness that works particularly well with cranberries.
If your cream cheese is still cold and firm, allow it to soften before mixing. Softened cream cheese will spread much more easily between the layers of bread.
Step 3: Cut the Bread
Cut the bread into approximately 1-inch cubes.
There is no need for every piece to be perfectly identical. A mixture of slightly smaller and larger cubes creates a pleasant variety of textures throughout the casserole.
Place about half of the bread cubes into the prepared baking dish.
Step 4: Add the Cheesecake Layer
Drop small spoonfuls of the cream cheese mixture over the bread.
Rather than trying to spread the cream cheese into one perfectly even layer, distribute it throughout the dish. This creates little pockets of cheesecake filling that become wonderfully creamy as the casserole bakes.
Scatter about half of the cranberries over the cream cheese and bread.
If using frozen cranberries, there is no need to thaw them first.
Step 5: Add the Remaining Bread and Cranberries
Place the remaining bread cubes over the first layer.
Then scatter the rest of the cranberries evenly across the top.
At this point, the baking dish should have distinct layers of bread, cheesecake filling, and cranberries without needing to look perfectly arranged.
Step 6: Prepare the Custard
In a large bowl, whisk together the eggs, whole milk, heavy cream, maple syrup, vanilla extract, cinnamon, nutmeg, and salt.
Whisk thoroughly until the eggs are completely incorporated and the mixture looks smooth.
The combination of milk and cream gives the casserole a rich texture without making it excessively heavy, while maple syrup provides sweetness and complements the cranberries.
