Ingredients
For the loaf:
- 200g (about 1 cup) cream cheese, softened
- 120g (½ cup) unsalted butter, softened
- 200g (1 cup) granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 240g (2 cups) all-purpose flour
- 1½ teaspoons baking powder
- ¼ teaspoon salt
- 120ml (½ cup) milk
- 150g (1 cup) fresh or frozen cranberries (if frozen, do not thaw)
Optional glaze:
- 100g (¾ cup) powdered sugar
- 2–3 tablespoons milk or orange juice
Step-by-Step Method
1. Prepare your baking setup
Start by preheating your oven to 175°C (350°F). Grease a standard loaf pan and line it with parchment paper, leaving some overhang for easy removal later.
2. Cream the butter, cream cheese, and sugar
In a large mixing bowl, combine the softened butter, cream cheese, and sugar. Beat them together until the mixture becomes light, fluffy, and smooth. This step is crucial—it creates the soft texture of the loaf.
3. Add eggs and vanilla
Crack in the eggs one at a time, mixing well after each addition. This helps maintain a smooth batter. Stir in the vanilla extract for added depth of flavor.
