Step 1: Prepare the Peas
If using frozen peas, there is no need to thaw them completely. Rinse them briefly under cool water and drain.
If using fresh peas, cook them in boiling water for 2 to 3 minutes until tender, then drain.
Do not overcook the peas. They should stay bright green and slightly firm, not mushy.
Step 2: Make the Cream Sauce Base
Place a medium saucepan over medium heat.
Add the butter and let it melt gently. Once melted, add the flour.
Stir continuously for 1 to 2 minutes. The butter and flour will form a smooth paste called a roux. This is what thickens the sauce.
Do not let the roux turn dark. For creamed peas, you want a light, creamy sauce.
Step 3: Add the Milk
Slowly pour the milk into the saucepan while whisking constantly.
Add the milk little by little at first. This helps prevent lumps from forming.
