Creamy Baked Carbonara: A Cozy, Cheesy Twist on a Classic Pasta Favorite

Creamy Baked Carbonara is the kind of comforting pasta dish that turns simple ingredients into something wonderfully satisfying. Inspired by traditional carbonara, this baked version combines tender spaghetti, crispy bacon, a rich egg-and-cheese sauce, and plenty of Parmesan, then finishes everything in the oven until bubbling and beautifully golden.

Unlike a traditional stovetop carbonara, which is served immediately after the sauce is emulsified, this version is designed for the oven. Baking gives the pasta a slightly crisp, cheesy top while keeping the center rich and creamy. It is an excellent choice for a family dinner, weekend meal, or whenever you want a hearty pasta dish that feels a little more special.

Ingredients

  • 12 ounces spaghetti or bucatini
  • 8 ounces bacon, diced
  • 3 large eggs
  • 2 large egg yolks
  • 1 cup freshly grated Parmesan cheese
  • ½ cup heavy cream
  • 2 cloves garlic, finely minced
  • ½ teaspoon freshly ground black pepper, plus more to taste
  • ½ teaspoon salt, or as needed
  • ½ cup reserved pasta water
  • ½ cup shredded mozzarella, optional
  • 1 tablespoon chopped fresh parsley, for garnish

Step 1: Prepare the Pasta

Bring a large pot of generously salted water to a boil. Add the spaghetti and cook until just shy of al dente according to the package directions.

Because the pasta will continue cooking in the oven, avoid cooking it until completely soft. It should still have a little bite in the center.

Before draining, carefully reserve about ½ cup of the pasta cooking water. This starchy water will help loosen the sauce and create a smoother consistency.

Drain the pasta and set it aside.

Step 2: Crisp the Bacon

While the pasta cooks, place the diced bacon in a large skillet over medium heat.

Cook for several minutes, stirring occasionally, until the bacon is browned and crisp around the edges. The rendered fat will provide a flavorful base for the dish.

Transfer the cooked bacon to a plate lined with paper towels. Leave about 1–2 tablespoons of bacon fat in the skillet and discard any excess.

Step 3: Add the Garlic

Lower the heat and add the minced garlic to the warm bacon fat.

Cook for about 30 seconds, just until fragrant. Be careful not to brown or burn the garlic, as it can become bitter.

Remove the skillet from the heat.

Step 4: Make the Carbonara Mixture

In a large mixing bowl, whisk together the eggs, egg yolks, Parmesan cheese, heavy cream, and black pepper.

Whisk until the mixture is smooth and well combined.

The combination of whole eggs and egg yolks gives the sauce richness, while Parmesan adds saltiness and a deep savory flavor. The small amount of cream helps the baked version stay luxurious and creamy.
