Tender pasta shells are coated in a rich tomato cream sauce, mixed with seasoned ground beef, and finished with plenty of melted cheese. The result is a hearty, cozy meal that feels indulgent while still being simple enough for a busy weeknight.
The beauty of this recipe is its balance of flavors. The beef brings savory richness, the tomato sauce adds a gentle tang, and the cream and cheese transform everything into a smooth, velvety sauce. The shells are especially useful because their curved shape catches the sauce, ensuring that almost every bite is packed with flavor.

How to Make Creamy Beef and Shells
Step 1: Cook the Pasta
Bring a large pot of generously salted water to a boil. Add the pasta shells and cook according to the package directions until al dente.
The pasta should be tender but still have a slight firmness in the center. Since the shells will spend another few minutes in the sauce, avoid cooking them until they are completely soft.
Before draining, reserve about ½ cup of pasta water. The starchy water is useful for thinning the sauce later while helping it cling to the pasta.
Drain the shells and set them aside.
Step 2: Brown the Ground Beef
While the pasta is cooking, heat a large skillet or Dutch oven over medium-high heat. Add the olive oil and ground beef.
Break the beef into small pieces using a wooden spoon. Cook for approximately 6–8 minutes, stirring occasionally, until the meat is thoroughly browned.
If there is a significant amount of excess grease in the skillet, carefully drain some of it. Leave a small amount behind because it contributes flavor to the sauce.
Season the beef with Italian seasoning, paprika, salt, and black pepper. Stir well so the seasoning is evenly distributed.
Why browning matters
Don’t rush this step. Allowing the beef to develop a little brown color creates deeper, more savory flavors than simply cooking it until gray.
Step 3: Add the Onion and Garlic
Add the diced onion directly to the skillet with the browned beef.
Cook for 3–4 minutes, stirring occasionally, until the onion becomes soft and translucent.
Add the minced garlic and cook for another 30–60 seconds. Stir constantly during this stage because garlic can burn quickly.
You should notice a fragrant aroma as the garlic warms. Once it becomes aromatic, move immediately to the next step.
Step 4: Build the Tomato Base
Add the tomato paste to the beef mixture and stir it through the meat and onions.
Cook the tomato paste for about 1 minute. This short cooking period helps deepen its flavor.
Pour in the tomato sauce and beef broth. Stir thoroughly, scraping the bottom of the skillet to loosen any browned pieces left behind from cooking the beef.
Bring the mixture to a gentle simmer.
If the tomato sauce tastes particularly acidic, you can add the optional ½ teaspoon of sugar. You don’t want the sauce to taste sweet; the small amount simply helps balance the acidity.
Reduce the heat to medium-low and let the sauce simmer for 5–7 minutes.
