Creamy Chicken and Mushroom Bake

 

Directions

  1. Prep the Oven

    • Preheat oven to 375°F (190°C).

  2. Cook the Chicken

    • Heat olive oil in a large skillet over medium-high heat.

    • Season chicken with salt and pepper, then cook for 5–7 minutes until golden brown and cooked through. Remove and set aside.

  3. Sauté the Veggies

    • In the same skillet, add onion and cook for about 3 minutes until softened.

    • Stir in garlic and mushrooms, cooking until mushrooms are tender and browned, about 5 minutes.

  4. Make the Sauce

    • Stir in thyme, chicken broth, and heavy cream. Bring to a gentle simmer and let cook for 5 minutes until slightly thickened.

  5. Assemble the Bake

    • Return chicken to the skillet and combine well. Transfer mixture to a baking dish.

    • Sprinkle mozzarella and Parmesan evenly over the top.

  6. Bake

    • Bake uncovered for 20–25 minutes, until the cheese is melted, bubbly, and golden.

  7. Serve

    • Let cool for a few minutes, then garnish with parsley if desired. Serve hot and enjoy!

Extra Flavor: Add a splash of white wine when deglazing the pan for a restaurant-style touch.
