Creamy Chicken Potato Chowder
Creamy Chicken Potato Chowder is the kind of comforting meal that turns simple ingredients into a rich, satisfying bowl of homemade goodness. Tender pieces of chicken, soft potatoes, sweet vegetables, and a velvety broth come together in one pot for a hearty soup that is perfect for chilly evenings, relaxed family dinners, or whenever you want something warm and filling.
Unlike a thin chicken soup, chowder has a naturally thicker, creamier texture. The potatoes help give the broth body while a combination of milk and cream creates a smooth finish without making the soup overly heavy. The result is a cozy dish with savory chicken, buttery potatoes, aromatic vegetables, and just enough creaminess in every spoonful.
Why You’ll Love This Chowder
There is plenty to appreciate about this recipe. It uses familiar ingredients, requires only one large pot, and can be prepared without complicated techniques. The vegetables are gently cooked until flavorful, the chicken simmers directly in the broth, and the potatoes become tender enough to add texture and thickness to the chowder.
It is also easy to customize. You can add extra vegetables, adjust the seasonings, use leftover cooked chicken, or make the chowder thicker or thinner according to your preference.
Ingredients
For the Chowder
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 medium yellow onion, finely diced
- 2 medium carrots, peeled and diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon black pepper
- 1 teaspoon salt, plus more to taste
- 1/4 cup all-purpose flour
- 4 cups chicken broth
- 2 cups whole milk
- 1 cup heavy cream
- 1 1/2 pounds boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 4 medium russet or Yukon Gold potatoes, peeled and cut into small cubes
- 1 cup frozen or fresh corn
- 1 bay leaf
For Finishing
- 2 tablespoons chopped fresh parsley
- 1/2 cup shredded cheddar cheese, optional
- Additional black pepper, to taste
Step-by-Step Method
Step 1: Prepare the Ingredients
Before starting, prepare all of the vegetables and chicken. Dice the onion, carrots, and celery into fairly small pieces so they cook evenly. Peel and cube the potatoes, keeping the pieces similar in size.
Cut the chicken into bite-sized pieces. Smaller pieces will cook relatively quickly and distribute evenly throughout the chowder.
Having everything prepared before you begin makes the cooking process easier and helps prevent the vegetables from becoming overcooked while you are still preparing other ingredients.
Step 2: Sauté the Aromatic Vegetables
Place a large heavy-bottomed pot or Dutch oven over medium heat. Add the butter and olive oil.
Once the butter has melted, add the diced onion, carrots, and celery. Cook for approximately 5 to 7 minutes, stirring occasionally, until the vegetables begin to soften.
Add the minced garlic, thyme, rosemary, smoked paprika, black pepper, and salt. Stir everything together and cook for another 30 to 60 seconds.
The short cooking time for the garlic is important. You want it to become fragrant without allowing it to burn.
Step 3: Build the Creamy Base
Sprinkle the flour evenly over the sautéed vegetables. Stir continuously for about 1 to 2 minutes.
The flour will coat the vegetables and combine with the butter and oil, creating the foundation for a thicker chowder. Cooking the flour briefly also helps remove its raw taste.
Gradually pour in the chicken broth while stirring. Add the milk slowly as well, continuing to stir so the flour dissolves smoothly into the liquid.
Do not worry if the mixture seems relatively thin at this stage. The potatoes and cream will contribute to the final consistency.
