Step 1: Prepare the Filling
- Mix the Ingredients: In a large bowl, combine the shredded chicken, Monterey Jack cheese, mozzarella cheese, softened cream cheese, diced green chilies, garlic powder, onion powder, ground cumin, salt, and pepper. Mix until everything is well combined and creamy.
- Adjust Seasoning: Taste the mixture and adjust the seasoning if needed. Set aside while you prepare the tortillas.
Step 2: Assemble the Enchiladas
- Warm the Tortillas: To make the tortillas pliable and prevent them from tearing, warm them in the microwave for about 20-30 seconds, or until soft.
- Fill the Tortillas: Spoon 2-3 tablespoons of the chicken mixture down the center of each tortilla. Roll up the tortillas tightly and place them seam-side down in a greased 9×13-inch baking dish. Continue until all the filling is used up.

- Create a Roux: In a medium saucepan, melt the butter over medium heat. Once melted, add the flour and whisk constantly for about 1 minute, until the mixture is smooth and bubbly.
- Add the Broth: Gradually pour in the chicken broth, whisking continuously to prevent lumps. Cook the mixture for 2-3 minutes, or until it starts to thicken.
- Add Sour Cream and Chilies: Remove the saucepan from heat and stir in the sour cream, diced green chilies, garlic powder, onion powder, salt, and pepper. Mix until the sauce is smooth and creamy. If the sauce is too thick, add a little more chicken broth to reach the desired consistency.
Step 4: Bake the Enchiladas
- Pour the Sauce: Pour the creamy white sauce evenly over the enchiladas in the baking dish, making sure all the tortillas are well-coated.
- Top with Cheese: Sprinkle the remaining 1 cup of shredded Monterey Jack cheese over the enchiladas.
- Bake: Bake in a preheated oven at 350°F (175°C) for 20-25 minutes, or until the cheese is melted and bubbly and the enchiladas are heated through.

- Garnish and Serve: Remove the enchiladas from the oven and let them cool for a few minutes before serving. Garnish with fresh chopped cilantro, if desired.
