Creamy Garlic Parmesan Scalloped Potatoes: A Rich Step-by-Step Side Dish Recipe
Creamy Garlic Parmesan Scalloped Potatoes are a comforting baked potato dish made with thinly sliced potatoes, a smooth garlic cream sauce, and layers of parmesan cheese. The potatoes bake slowly until tender, while the sauce becomes thick, rich, and flavorful. The top turns golden and slightly crisp, while the inside stays soft, creamy, and cheesy.
This dish is perfect for holidays, Sunday dinners, family meals, potlucks, or anytime you want a side dish that feels warm and special. It pairs beautifully with roasted chicken, steak, turkey, baked fish, meatloaf, or vegetables.
What Makes This Dish Special?
The secret to great scalloped potatoes is the sauce. Instead of simply pouring cream over potatoes, this recipe builds flavor with butter, garlic, flour, milk, cream, parmesan, and seasoning. The garlic adds aroma, the parmesan adds salty richness, and the cream gives the dish a smooth, luxurious texture.
Thin potato slices are important because they cook evenly and absorb the sauce. As the dish bakes, the layers soften and the sauce thickens around them, creating a rich casserole-style potato dish.
Ingredients
For the Potatoes
- 4 pounds potatoes, preferably Yukon Gold or russet
- 1 tablespoon butter for greasing the baking dish
- 1 cup grated parmesan cheese
- ½ cup shredded mozzarella cheese, optional
- 2 tablespoons chopped parsley, optional for garnish
For the Garlic Parmesan Cream Sauce
- 4 tablespoons butter
- 5 cloves garlic, finely minced
- 3 tablespoons all-purpose flour
- 2 cups whole milk
- 1 cup heavy cream
- 1 cup chicken broth or vegetable broth
- 1 cup grated parmesan cheese
- ½ teaspoon salt, or to taste
- ½ teaspoon black pepper
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ¼ teaspoon paprika
- ¼ teaspoon nutmeg, optional
- 1 teaspoon fresh thyme or dried Italian seasoning
Step 1: Prepare the Potatoes
Wash and peel the potatoes if desired. Peeling gives the dish a smoother, more classic texture, but leaving the skins on can add a rustic look and extra flavor.
Slice the potatoes very thin, about ⅛ inch thick. A mandoline slicer is helpful because it creates even slices, but a sharp knife also works.
Try to keep the slices the same thickness. If some are thick and others are thin, they may cook unevenly.
After slicing, place the potatoes in cold water for a few minutes to prevent browning. Before using them, drain and pat them dry with a clean towel. Dry potatoes help the sauce cling better.
Step 2: Prepare the Baking Dish
Preheat the oven to 375°F / 190°C.
Grease a large baking dish with butter. A 9×13 inch dish works well for this recipe.
Greasing the dish helps prevent sticking and adds flavor to the bottom layer of potatoes.
Step 3: Make the Garlic Butter Base
Place a saucepan over medium heat and add the butter.
Once the butter melts, add the minced garlic. Stir for about 30 seconds to 1 minute until the garlic becomes fragrant.
Do not let the garlic burn. Burnt garlic can make the sauce bitter.
This step creates the first layer of flavor for the creamy sauce.
