  • 6 medium russet potatoes, peeled and diced
  • 6 slices of bacon
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, minced
  • 4 cups of chicken or vegetable broth
  • 1 cup of heavy cream or half-and-half
  • 2 tablespoons unsalted butter
  • Salt and black pepper, to taste
  • Optional toppings: shredded cheddar cheese, green onions, extra bacon bits, or sour cream

Step 1: Prepare the Bacon

  1. Place the bacon slices in a cold pan and turn on medium heat.
